I am looking for ways to serve different foods. Does sauteeing in olive oil make veggies "un-nutritious"?

I did try the dandelion greens raw , but they were pretty bitter, I am trying to find a way to serve them to my family that they would enjoy - we are not vegetarians, but when it comes to making healthier food choices, I figured this group would have the best answers. Thanks!

I sauteed the onions and bell peppers first and once they were just about done I added the nuts and greens and cooked till the greens were limp. I am slowly trying to add new and healthy stuff to the dinner table - I know onion rings and french fries don't count as vegetables, but satueed - I wasn't sure about.
Over rice would be very good I think - thanks ntatda2...
I have read controversial stuff about olive oil, canola oil, etc, but since I am not drinking ounces of the stuff I am not too worried there.

Would definitely be nutritious and the onion/peppers would add flavor, cashew would add crunch, and the dandelion greens would add texture...the dandelion flowers would add color too, that is something to consider.

Its very nutritious.
Olive oil is a good fat. The only concern with the olive oil would be the calories if you are calorie conscious.
Everyone needs a little fat in their diet and olive oil is a good way to get it, just in small amounts.

Olive oil is the best to cook veggies with. Actually you should probably steam the veggies in water and use the oil afterwards for flavor.

I think it would be better un cooked, cooking it would wilt the greens. Maybe use the olive oil just as a dressing.
Yes, it does sound nutrious and tasty.

butter would be better! If you have to use margarine, add a little to the pan until it melts (slow, low heat) and let some of the water in it evaporate. Then toss the veggies and add more if you think it's not coated. watch it carefully! margarine may burn or react differently to the higher temp!

sounds good to me, the only problem with dandelion greens for me is that they shrink so much when you cook them. are you going to serve this over rice?

All the first stuff is but olive oil is probably the worst oil for you so i'd steer clear.
