how come in canada, chinese food is chaw mein, rice, prawns, calamari, and deep fried cod are surved, but in china they serve brains and eye balls?

That's called adjustment.In arab's the don't serve pork,in israel they don't serve pork,crabs,oyster and shrimps and in some part of india the will not serve beef.Even in china most chinese food don't serve that stuff.Because every culture have their own standart of taboo in culinary.

Don't think they didn't want to. If the demand is there, they will not hesitate to put it on the menu. :-) Seriously, a few reasons.
1. You just don't get much in quantity even if there is a demand. let's see 1 bovine = 1 brain(about 2 lbs)+2eyeballs(about 3 oz.) If the demand soar, these parts will be 10 times the price of filet mignon in weight.
2. They serve these things in china because meat is a luxury still in most kitchens. When they butcher an animal for food, they will consume all the edible parts so as not to waste any "food" material, really.
3. I have eaten both, and believe me, it not anything to die for.
Last but not least, the restaurant that serves these things just might get fire bombed for animal cruelty in Canada...Just kidding... :P

That is because they know what to serve to Candians that Canadians will eat. So they leave out the strange part of Chinese food and serve the part that people will not hesitate to get a bite of.

because they serve Canadians what they will eat. Do you want to eat brains and eyeballs? As foods migrate into unfamiliar areas they are altered to suit the people who are eating them in that region.
Just as Taco bell serves "mexican" food to the people in the US but it is not the true style of food that hispanic people eat in Mexico or even those living in the US.
