You don't need pancake mix, pancakes are SO easy to make from scratch:

Sift flour into a bowl with a pinch of salt. Break in an egg and stir until all the lumps have gone. Add milk to the right consistency (thin or thick according to taste). Cook in the normal way. NB The first one usually doesn't work well because the pan isn't hot enough but persevere, the others will be delicious. Enjoy!
