Actually I'm not aware of any fruit or veg that needs to be cooked first other than dried legumes (beans). These need to be soaked, the water discarded, then cooked. Many beans are harmful if not soaked and cooked first, but as they are unlikely to be used in fruit/veg juice it doesn't count.

But, all fruit and veg should be washed prior to using them for anything

It depends where you are. Ginger you shouldn't have to cook ever. But many vegetables grown on large factory frams should be cooked before eating because workers on those farms often don't leave the field to do their number ones and twos. The biodegraded matter from this is called night soil. Night soil is okay to use for farming but only if you cook everything. Many cultures think salad is disgusting for this reason. This is also the cause of recent large scale e. coli breakouts in North America.
You should be okay with eating raw broccoli however. Wash it good and consider growing your own veggies so you know what has happened to them.

no, you do not have to cook first!

i have been jucing about 4 years now. all vegetables and fruits
may be juiced raw. mixing certain veges and or fruits is an enzymaticaly different story. there are many juice recipes on the net. or juicing books available at your local heath foods store.

i recommend:

1.sampson juicer:
for wheatgrass

2. any breville juicer- for all fruits and vegetables

3.any and all books by dr. Robert O. Young

Put in juicer recipes in you web search you will find many recipes. Actually, you should had receive a recipe booklet with your juicer.

Then there is always a book store.

No the idea is to get the vitamins from the raw product, if you cook them you lose half of it.
