VERY LOW FAT FISH PIE

Pack of smoked mackerel Fillets
2 Leeks sliced and simmered in boiling water for 5 to 8 mins
Can of Sweetcorn
2 Tablespoons Creme Fresh
I table spoon Horseradish sauce.

Mix all ingredients together and place in an overproof dish. Cook for half and hour on Gas Mark 4.

You can add mash potato on top if you want mixed with butternut squash

It's delicious

What about replacing the pasta with rice? Just as yummy and you get more fibre if you use brown rice.

1 lg can of V8, 1 bag of frozen veggie mix, barley or pasta and season to taste.
Super fast, easy, healthy and cheap
I make this a lot in the winter - so much better than tomato soup!

My favorite is vegetarian chili. In a large pot, combine:

One large can of tomato juice
Two cans, your choice any combination, kidney beans (dark or light red), chili seasoned beans, black beans
Two LARGE cans (or about 5 small cans) of diced tomatoes
One can corn, drained
One sauteed onion
One sauteed, chopped green pepper (if desired)
Season with:
Salt, pepper, garlic powder, and
Chili powder to taste
Cayenne pepper if you like it hot
(you can also add textured vegetable protein -TVP, available in health food stores--if you really miss the meat Reconstitute it, if you get it dried, and fry it with seasonings before you add it to the chili).
Simmer together for about 30 minutes. Serve crackers, and/or top with cheese.

Also, substitute cubed tofu for meat in a stir-fry. You can get frozen stir-fry veggies, or just use snap peas, green beans, baby corn, mushrooms, water chestnuts, (any combination). Sautee with vegetable or canola oil, and season with ginger, soy sauce, garlic, and/or a squeeze of citrus... serve over rice.

Soups-so many variations,broccoli and smoked cheese(you dont need much cheese for the flavour) or a mixed veg broth,really chunky with broth mix in to fill you up. Experiment with different herbs or spices for a change.

Try this one....spicy, super easy, quick. Low fat too!

Take plain, trimmed boneless, skinless chicken breasts and shake them in a packet of taco seasoning mix.

Place them in a casserole dish sprayed with non-stick cooking spray like Pam.

Bake at 350 until done 20-45 minutes depending on the size of the chicken.

At the last 10 minutes, add a few healthy scoops of salsa to the chicken and bake more until hot. Top with low fat sour cream and low fat cheddar shreds.

Serve over brown rice.

It's meaty, starchy, spicy and filling. And very low fat.

If your are watching carbs you can substitute broccoli for the rice.
