A fruit and vegetable diet is unbalanced but if you add grains (eg cereals) which are 11% protein you will get much of what you need.
Eat a wide variety (for trace minerals), drink water often, and be aware vitamin C has a laxative effect.
Hair loves all vitamins but especially A (carrots, tomatoes, papaya) and iron (fortified cereals, legumes and most vegetables). Your hair won't love an acid imbalance caused by too much citrus (or meat; cause of baldness in a lot of men)
Your body will change through a faster constitution (clearer skin), better circulation (possibly redder skin) and general efficiency.
All vegetarians are advised to get a (health/scientific, not diet/lifestyle) book on nutrition to avoid deficiencies- meat eaters get a short cut by consuming animals which spend a lot of time collecting the same nutrients we need.

your body will change and you will be more healthy...
but like any diet you need to eat healthy and balanced...
you need the right amount of fruits and vegetables and you also need protein...and carbohydrates, you will get the natural carbs from your fruits and veggies,,,but their are no proteins in these foods you could become week after awhile...
if you choose not to eat meat like items...then you must get PROTEIN from nuts or tofu or beans, or eggs...protein is very vital it keeps your muscles healthy and also your big muscle your brain...
so if this is something your very serious about then you should research some vegetarian diets, or if you don't want to eat any kind of animal products then you can research vegan diets...try google its a great place to start...
PLEASE BE SMART (research your options) your bound to find something that works well with your lifestyle...

you could also drink protein shakes with peanut butter added this will give you all the vitamins and minerals your body needs...and also add flavor...
also don't forget to take a good multi vitamin daily as your limiting your nutrients with food...
also you will probably need to eat about 5 to 6 times a day so your body won't go hungry....

you talk about your hair, skin, and nails...they are protien so inorder to have good hair, skin, and nails you need to have the proper amounts of protien for these to be healthy...

You will be doing a wonderful thing for the earth, and you will be doing a wonderful thing for your body too.
I have been a vegetarian for 20 years. I am healthy as a freaking horse, I have the energy of a 20 year old (I'm 50), and I just feel sensational.
Now I eat veggies in the form of tofu, tempeh, veggie burgers, etc. as well as veggies as veggies.

Your hair and nails will become lifeless because of the lack of protein. Your skin will become pale and sallow-looking. Your muscles will waste away. In other words, you cannot live on this diet. There are vegetarian ways to get your proteins. You need grains and legumes. Soy products come in lots of interesting variety, such as soy burger. Enjoy!

you need also proteins (for your miscles) and carbo hidrates (for your brain). If your diet is only friuts and vegetables for longer time, it can burden your liver and also be very dangerous.
