1/2 lb vermicelli (angel hair nests). Vermicelli usually comes in 1 lb packages, so about 1/2 a package.
1/2 cup olive or grape seed oil
1/2 yellow onion, minced
2 fresh tomatoes, peeled and chopped
2 cups chicken broth
Salt and pepper
In a 9-inch frying pan (with lid), fry the vermicelli on both sides in hot oil until golden brown in color. Remove from pan.
In the same oil, brown the minced onion, add the chopped tomato. Add chicken broth. Season with salt and pepper to taste.
When broth is boiling, add vermicelli and reduce heat to a low simmer. Cover and cook until the vermicelli has soaked up the liquid, about 30 minutes.

A classmates wife taught me this recipe. She kept emphasising that I could add whatever I liked.... shrimp, pork, garlic, onions, etc.
This is the basic recipe she started me out with for Pancit.
Pancit
Vermicelli (soaked until soft using warm water)
Chicken (cut into matchstick strips)
Nappa Cabbage (about 1/2 cups, cut into thin shreds)
Chicken Broth (1 can)
Green Onion (Chopped for garnish)
lightly sautee the chicken until cooked.
Add the noodles and cabbage
Add broth a little at a time till the noodles soak up the broth
Garnish with green onions
Total cooking time was about 15 minutes.

well, there are a lot of recipe's you can use....instead, I'll give you some options...that way it's still your idea
there are two ways to eat these noodles....warm or cold
either way you have to cook them, for like five minutes....maybe less depending on how good your stove and pot are, and if you use soft water as well, sometimes it can take up to 10 minutes, and sometimes it can take 2 minutes.....but it's easy to tell when they are overdone....they will finally look bigger...you don't want that
now, a really good way to eat it cooked, you should have guess, STIR-FRY! and I mean, it's stir fry, whatever you like, chicken, beef, shrimp....those are just the 3 most popular choices, than your choice of veggies, make sure they are all sliced thin, that way the meal take like a minute to fry up
add your pre-cooked noods (<---sorry, I like calling noodles noods, deal with it), and a sauce of some sort, which is easy to select, just look in the grocery store, they usually have five to ten to choose from.
another way is cold, like that salad you guys had....I mean it's salad, so simple, like lettuce and veggies, not too many veggies, and nothing like cucumbers or tomatoes, nothing too juicy, and an oriental dressing.
another great way is in a wrap, this way you can decide for yourself whether the noods are cold or warm (not hot) and just put some lettuce, a type of meat substance, maybe some saute'd pepper and onions, your noods and some sort of sauce.
so as you can see, I might have been too plentyful with my suggestions, now you might not know what to decide.

Ingredients:
Vermecelli 250 grams
Chopped onions (2 to3)
Chopped green chillies(according to your taste -if you don't want it to be spicy,use only 1)
oil 2 to3 tbsp
curry leaves (optional-4 to 5leaves)
mustard seeds1/2tsp
water1/4litre
salt to taste
Method
Heat oil in a pan(2tsp).Add vermecelli and saute till golden brown and keep it aside.Heat oil in a pan(2 table spoon),add mustard seeds .After they start popping,add curry leaves,chillies and onions.Saute till onions turn light pinkish.Add water and let it start boiling.Add salt(1/3tsp)and mix well.When the water is boiling,add a teaspoon of oil and add vermecelli .Mix well so tha no lumps are formed.(Make sure that the water is completly absorbed.)Take it off the flame .Serve hot.
Note :This recepie does not taste good if refrigirated or cooled down for a long time.

Rice Vermicelli with Bok Choi and Cilantro
8 ounces dried rice vermicelli
4 large dried shitaki mushrooms
1 tablespoon vegetable oil
4 large cloves garlic, peeled and minced
8 cups unsalted chicken or vegetable stock
5 green onions, white parts only; 3 crushed, 2 thinly sliced on the diagonal
2 thin slices of peeled fresh ginger
Salt
1 skinless, boneless chicken breast, thinly sliced on the diagonal
2 heads small bok choi, trimmed and ribboned to 1/4-inch
1/2 cup fresh cilantro leaves

Soak the noodles and shitakes in two separate bowls of hot water until soft. After about 20 minutes, drain the shitakes. Trim and discard stems, and julienne the caps. Heat the oil in a small saucepan over medium heat. Add the garlic and fry until golden. Remove from heat and set aside. Place the shitakes, stock, crushed green onions, and ginger in a large pot. Season with salt. Bring to a boil over high heat, then reduce heat to medium-low and simmer.
Bring a pot of water to a boil over high heat. Drain the vermicelli, add to the boiling water and cook for 5 seconds; remove with a sieve and divide between 4 large soup bowls. Add the chicken to the boiling water, cook for 10 seconds, remove with sieve, and divide between the bowls. Add the bok choi to the pot; blanch until just tender, 1-2 minutes. Remove with sieve, arrange on chicken and ladle about 2 cups of broth into each bowl. Garnish with sliced scallions, cilantro and the garlic. Serves 4.

take hot water. cover the thin rice noodles with hot water and allow it to stand for 5 minutes.drain it.take fry pan add little oil heat and add the noodle and fry for awhile till they become dry.now u can add any salad dressing on it or even little salt ,pepper and lime juice is good
