That would depend on what's in it. There are various flavors and sensations in a paella. They can be made of purely seafood, a mixture or just meat (usually chicken, rabbit and small cut pork ribs). So as you can see there are a variety of textures ranging from shellfish to meat with bones. The rice should not be too sticky, in fact it should be just cooked through and then cover the paella pan with a newspaper and let the rice absorb the moisture and steam. A lot of people like it to get really brown on the bottom, so that part is almost crunchy. Something a 15-year-old would say, I'd have to agree with crumbly and/or chewy for the meat and seafood in it, especially the calamares, which could be called rubbery even..

i think paella is arrozvalenciana here in the philippines brought by early castellanos.usually it rice cooked with hotdog,meat,potato,onion,garlic and sweet pepper plus red coloring from atsuete seeds .salt is added to enhance flavor.it is rice plus viand menu.itmis glutinous rice called malagkit in tagalog term.

It is made of short grain rice, cooked long enough for the rice to be soft. a lot of starch is released and it is sticky. The liquid is thick (because of the starch).

it has a variety of textures, its got lots of different things thrown in, rice..starchy consistency, fish.. delicate,prawns..hard to put into words that one..but many many different consistencys i'd say..and end with im not being a smart alec either!

I think it's best described as chunky. It's got rice and whatever's left in the kitchen in it.
