Since you are serving that many people it's best to have more than one main dish (I come from a family of picky eaters). Lasagna is a great dish (that you can make in big batches pretty easily). Also don't forget about the vegetarians (maybe a spinach lasagna).
Right now I'm in love with Lamb- It's delicious and it's seems really fancy but isn't. Here is a recipe for Lamb Casserole
INGREDIENTS
2 sprigs fresh parsley
2 sprigs fresh thyme
2 bay leaves
2 pounds lamb shank, cooked and diced
1 pound cubed ham steak
10 small onions
5 tomatoes - blanched, peeled and chopped
2 cloves garlic, chopped
4 cups chicken stock
2 (15 ounce) cans cannellini beans, drained and rinsed
6 links pork sausage links, halved
DIRECTIONS
Tie the sprigs of parsley and thyme together with the bay leaves or place them in a cheesecloth and tie closed, because you will want to easily remove the herbs later. Place the herb bundle, lamb, ham, onion, tomato, garlic and stock in a large saucepan over medium-high heat.
Bring to a boil, reduce heat to low and simmer for about 1 hour. Stir in the beans and sausage and continue to simmer for about 15 minutes, or more if you want a thicker consistency.

you're spectacular that if one is following the policies of etiquette strictly, one web hosting a cutting-edge-giving celebration does no longer anticipate travelers to hold nutrition to boot. That being suggested, many families do no longer persist with formal policies of etiquette for relatives gatherings to have fun issues like graduations and birthdays. Pot-success relatives activities are very common. in certainty, many might think of it ordinary to no longer carry something to a relatives accumulating. the base line right here is that the only situation you have administration over is the form you behave - so remember that regardless of in case you think of she is out of line, 2 wrongs do no longer make a superb. My maximum suitable suggestion is to hold a dish (in case you may) and convey a cutting-edge to boot. And NO, the dish would not ought to serve 60 human beings. If all of us delivered a dish that served 60 human beings you need to feed a small city. This particularly isn't a huge deal and you're letting your self get way too labored up over it. Your husband is sturdy.

Smoke a bunch of meats like briskets chicken ribs sausage links or maybe even a turkey. Meat like that will feed that many people and they wont have problems deciding on side dishes to bring. Another ides is to make some meatloafs. I love to cook so it seems pretty simple to me. Good luck.

It depends...are you planning to tell your guests in advance what you are serving so they will know what will accompany it well? I could say something simple like lasagna but if people will bring potato salad, that won't work out very well. If you are not going to tell them, you rally need a neutral food that goes well with a variety of things. Need more info please :)

A pre-sliced honey baked ham would work nicely. Or smoked brisket.
