Instant Rava Handvo

1 cup Fine soji, (semolina)
1 cup Thick buttermilk, up to 1 1/2
3x Green chillies finely chopped
1/2 cup Vegetables as per choice finely chopped, (carrot, beans, spinach, onion, capsicum, cabbage, etc. )
1/4 tsp Baking soda
3tbl Oil, (3 to 4)
1tsp Cumin seeds
1tsp Mustard seeds
Salt to taste

Mix all ingredients, except soda and oil. Make a thickish batter, adding buttermilk accordingly. Keep aside for 30 minutes. Now gently mix in soda. Put a medium heavy saucepan or kadai to heat. Put 1/2 tablespoon oil in pan, add very few of both seeds. Allow to splutter. Pour 1ladleful batter in oil. Cover and allow to cook on very low. When the base turns crisp and golden brown, flip over. Allow other side to become crisp. Serve hot with green chutney or sauce. Repeat with remaining batter. If many are required at a time, use more than one stoves and pans. Or use the paddu tava. (It is a thick iron griddle with cup depressions like muffin trays.)


Variation: Grind a handful of green peas and spinach leaves and add to batter to give a green colour to the cakes.

Note:See that the cakes are made in a heavy pan on low flame or in a good nonstick one. Other wise the bottom will tend to stick. Also, make sure the base is well golden before

Handvo!

Add gourd, coriander and greenchilli.
Heat oil in a pan, add urad & channa dals, and seeds.
Allow to splutter, pour half in the batter, mix thoroughly.
Put in a greased oven proof deep container.
Pour remaining seasoning on top.
Place in a preheated oven at 280ºC for 10 minutes.
Reduce to 200ºC or 180ºC for 40 minutes or till done.
Check by inserting a skewer which should come out clean.
Slice into wedges and serve hot.

to make Handvo,
1 cup urad dal,
1 cup rice, 1/3 cup chana dal
1 tsp soda bi cab,
salt, turmeric
1 tsp sugar,
green chillies,
grated dudhi,
crushed ginger,
curry leaves,
mustard seeds, sesame seeds
3tbsp oil,
water

soak the urad dal, chana dal and rice overnight and grind them on the other day, now add to it the dudhi, turmeric powder, salt, green chillies, crushed garlic (optional), crushed ginger, soda bi carb and put in it the hadva cooker. do the 'vagar' of mustard seeds, sesame seeds,curry leaves and green chillies over this layer of the dals and then allow it to cook for 1 hr. you can serve it with coriander chutney, chundo or pickles.

this is a gujarati receipe, which is cooked ine small earthen bowls, or handis, that's why called handvo !
