i have a mate who is a veggie he says..........

oh i'm veggie hahahaha i like to eat cous cous it gives me a thrill especcially when you have loads of it. i have a bit of a fettish for it [blanked out] i hope you enjoy some cous cous soon as i feel it is amazeing!!!!!!

STUFFED ZUCCHINI

8 zucchini
35g white bread, crusts removed
milk, for soaking
125g ricotta cheese
3 tablespoons grated cheddar cheese
1/3 cup grated Parmesan cheese
2 teaspoons chopped fresh oregano
2 teaspoons chopped fresh thyme
1 clove garlic, crushed
1 egg yolk

Preheat the oven to moderately hot.
Cook the zucchini in boiling salted water for 5 minutes then drain.
Meanwhile, soak the bread in the milk until soft, then squeeze dry
Cut the zucchini in half and scoop out the flesh with a teaspoon
Chop the zucchini flesh finely.
Place in a bowl and add the bread, cheeses, herbs, garlic, egg yolk and season with salt and pepper.
Mix together, adding a little milk to make it bind together if necessary.
Fill the zucchini shells with the stuffing.
Brush and ovenproof baking dish with oil and arrange the zucchini close together.
Bake in the oven for 35 minutes, until golden on top

2 ripe firm pears, cored
lemon juice
1 red oak leaf lettuce or other red lettuce (coral or mignonette), leaves separated
1/3 cup unsalted walnut halves
2 tablespoons crumbled low-fat ricotta cheese

Red Wine Pear Dressing

1 canned or blanched fresh pear, with 1 tablespoon liquid reserved
2 tablespoons red wine or balsamic vinegar
1 teaspoon freshly ground black pepper

1) To make dressing, place pear and liquid vinegar and black pepper in a blender. Puree.
2) Cut each pear into eight segments. Place in a bowl and add lemon juice. Toss to coat (this helps prevent the pears from browning).
3) Arrange lettuce on a serving platter. Top with pears. Drizzle with dressing. Scatter with walnuts and cheese.

There are loads. You could make your own cauliflower cheese, Spanish omelettes, veggie chilli, add celery/peppers instead of beans. Suggest you buy a veggie cook book as too many to list here and dont have time!

do you like spicy food? veg curries or veg chilli,for the currie cook oinon ,garlic, for a few mins over med heat 1 teaspoon of mild curry powder 1of turmeric cook for another min or 2 add veggies of choice make sure the veggies are coated in the mix cook for 4-5 mins add EITHER tin of toms OR natural greek yougart bring to boil ,simmer till veggies are to ur liking.enjoy!!!! roasted med veg ;courgetts,vine toms,red oinon,mushrooms,olive oil over the top roast 4 20-30 mins.ENJOY!!!!!!!!!!!!!!!!!!!!!!!!
