I would like to plan 1-2 vegan meals a week, but I have an aversion to soy products or anything heavily processed. Where can I find vegan main-course recipes that center on beans or nuts for protein?

Check out my free online cookbook, Eating Vegan. I have over 100 vegan recipes and most do not use soy.

try allrecipes.com click on menus and you can go to the vegetarian they offer meals from breakfast,lunch and dinner. Although some people have different ideas what is vegetarian or vegan so you might find some recipes not staying true to the definitions but many are great choices! just take a look at the recipe ingredients below is the link to take you to the meals

I would recommend some very good vegan cookbooks. They will have some soy in them, like tofu and soy milk, but not all of them (I substitute rice milk for the soy milk and get the same effect).
Candle Cafe (great entrees)
Vegan with a Vengenance (great entrees and baked goods)
Voluptous Vegan (mainly for desserts)

How about peanut butter noodles with veggies? Sort of a Thai flair. Use whole wheat pasta and natural peanut butter. There are tons of recipes online for it.
