Hi,
having some Egyptian friends, I will tell you some favourites:
1. Mlookieh (a little like spinach, but not quite) made with rabbit or pigeons. Here in Jordan we prefer it with chicken.
2. Koushari: This is a dish made with lentils and rice, served with fried onions and, this is special for the egyptian version, with elbow noodles and tomato sauce with garlic. This dish can be bought in Egypt as the Europeans buy French Fries and Burgers or sausages; at snack barss or food courts all about town.

Ancient Egypt or today's Egypt?
Today Egyptians eat like most of the Arab world. They seem to have a great liking for fava beans and chick peas.
Ancient Egyptians loved bread, onions and beer.
