Spicy Shrimp Pasta

1 c olive oil
14 oz can of diced tomatoes, drained
1/2 medium onion, chopped
2 cloves garlic, minced
2-3 T cilantro, chopped
1 T chili powder
1 t crushed red pepper
1 t cumin
1 t salt
1 lb. raw shrimp, peeled and de-veined

8 c water
1/2 t saffron
1/2 t tumeric
1/2 t salt
1 T olive oil
1/2 lb linguine


Combine first nine ingredients (up to the shrimp) in a large skillet over medium heat and cook for 10 minutes. Turn off the heat and allow the mixture to steep for 10 to 15 minutes.

Bring water, saffron, tumeric, salt and oil to boil and boil for 5 minutes. Then add pasta and cook until done.

Turn heat back on under skillet and, when mixture bubbles, add shrimp. Cook 3-4 minutes until shrimp is pink.

Drain pasta and return to pasta pot. Add shrimp mixture and cook over high heat for one minute, stirring constantly.

Serve immediately with grated parmesan, chopped green onion, more cilantro, black pepper and maybe champagne.



Note: This is based on a recipe by Emeril, although his uses lobster. It is incredibly forgiving. You can do the first step hours in advance and then just add the shrimp and make the pasta before you serve it. I have improvised with spinach, mushrooms, chicken- it's flexible.

Shrimp Jambalaya Linguini


6 servings 30 min 15 min prep

1 tablespoon olive oil
1/2 lb small shrimp
1 cup green bell peppers, chopped
1 cup red bell peppers, chopped
1 tablespoon onion powder
1/2 teaspoon minced garlic
1 (26 1/2 ounce) can hunt garlic and herb spaghetti sauce
2 tablespoons worcestershire sauce
1 tablespoon balsamic vinegar
1/2 teaspoon dried thyme leaves
1/4-1/2 teaspoon cayenne pepper (optional)
12 ounces linguine
romaine lettuce (optional)
fresh spinach (optional)


In a skillet over medium high heat, heat the olive oil.
Add chopped peppers, onion powder and garlic; cook 5 minutes (or until tender), stirring frequently.
Stir in pasta sauce, shrimp, and remaining ingredients (except pasta).
Heat to boiling, reduce heat, and simmer 10 minutes.
Meanwhile, cook pasta in boiling water until tender; drain and toss with a little olive oil.
Spoon sauce over hot pasta.
SERVING SUGGESTION: Serve with a romaine and spinach salad.

In one pan, heat up some Extra Virgin Olive Oil (about 1/2 a cup), then add in about 5 diced tomatoes (or 1 can of diced tomatoes), salt to taste, bring to a boil, and let simmer for a while (stirring occasionally) until the fresh tomatoes become mushy, or the canned tomatoes turn a much darker shade of red. Boil a big pot of water for the pasta (I recommend Linguine from Barilla). Heat up some Extra-virgin Olive Oil in a saucepan (enough to stir-fry in). Saute in 2 diced garlic cloves until golden, then add in some crushed red pepper (depends how hot you want it). Toss in some cut-up shrimp (and squid if you like it), add a dash of good white wine, let it steam up, then add in the tomato sauce. Cook the pasta, drain, then put it back in the pot and mix the sauce in.

Cajun Spicy Shrimp -

1/4 c butter
1/4 c dry white wine
1 tsp garlic salt
1/2 tsp rosemary, crushed
1/2 tsp paprika
1/4 tsp basil
1/4 tsp cayenne pepper
1/8 tsp oregano, crushed
1 lb large shrimp, butterflied w/ tails left on

Melt butter and add wine and spices. Bring to a boil; reduce heat and simmer uncovered 5 min. Wash shrimp and pat dry. Add toskillet and saute until pink and edges curl. Serve on bed of rice or over linguine noodles.

Sizzlin Shrimp -

1/2 stick butter
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp curry powder
1/2 tsp dried oregano
S&P to taste
1 lb shrimp, shelled and deveined
linguine noodles, cooked
parmesan

Melt butter. Mix spices in butter. Dip shrimp in mixture until well coated. Grill on a sheet of foil or broil in oven until golden brown. Serve over linguine and sprinkle with parmesan.
