There is nothing wrong with including a carrot in a diabetics diet as long as you do not include other foods with a high Glycemic Index in the diet. I know a diabetics who has a daily bowl of ice cream but has no other sugars or carbs just to be able to indulge in his treat. Just keep the total daily glycemic index low and it should be alright.

Carrots are sweet and starchy, but I think as long as one doesn't eat them in abundance, and pairs them with protein, there shouldn't be too much of a problem. Just don't candy the carrots by adding brown sugar or anything.
