Venetian foods are northern italian foods. Risotto is a common food, as is asparagus with egg, fish and duck are eaten here as well. Unlike the more southern area's there are less tomato dishes there. Here are recipes for a venetian meal:
Roast Duck and Celery
ingredients
1 x 3 kg duck, 80gr olive oil, 1 branch of fresh rosemary, sage leaves, 1 carrot, 1 onion, 1 celery stick, 1 glass of dry white wine, salt, pepper.
Method:
For four people, place the cleaned duck inside a casserole dish with plenty of salt.
Flavor it with the olive oil and the rosemary, sage, pepper and the chopped carrots, onion and celery.
Cook the dish in an oven at 200° and turn the duck from time to time.
Add the white wine halfway through the cooking process and let it evaporate completely.
Then cover the duck and cook further.
Dont forget to stop the meat drying out by spooning the juices over the duck.
Serve hot with a side dish of celery which will aid digestion by removing the fatty taste from the mouth.
Saffron Rissotto
ingredients
400gr arborio rice, 1 liter of stock, 2 sachets of saffron, 1 glass of milk, 75gr butter, half an onion, 1 glass of white wine, salt, pepper, nutmeg, parmigiano reggiano cheese.
Method
Brown the chopped onion in 50gr of butter, ideally from Valtellina or Trentino. Spice the result with salt, pepper and nutmeg. Add the white wine and allow the liquid to reduce, then add the rice and a sachet of saffron. Let the mixture cook a bit then add the stock ladle by ladle, each time allowing the rice to cook that little bit more as the liquid reduces. Once the rice is cooked three quarters of the way, add the milk and continue to cook until done. Also at this point add the rest of the butter and as much grated cheese as you like. Serve immediately.
Asparagus with Egg
ingredients
1,5 kg asparagus, 4 eggs, extra virgin olive oil, vinegar, salt, pepper
Method:
Bind the asparagus in bunches and boil them in salted water with the tops upwards for about twenty minutes.
Boil then eggs for about five minutes, hatch, mince them with a fork and add oil, vinegar, salt and pepper.
The sauce serves either to die the asparagus, or to dress them lying on a plate.

All the delicious foods in the world. Authentic bolognese sauce, heavenly gelato, crisp biscotti, wonderful pastries, the best foccacia, the list is endless. And many, many fish dishes, don't forget Venice is surrounded by water.
We were in Venezia twice in one year. Can't get enough. I need to sit on the grand Canal in one of the many open air cafes, near the Rialto Bridge, people watching, smelling the salt air, drinking an icy cold beer, and eating a panini sandwich.
