i want to buy a knife set that i won't have to sharpen. i see a lot of the Santoku knife's that look like what Rachel Ray uses on her cooking show, but i don't know if i would have to sharpen it if i buy it. they're pretty cheap, like $39.99 for a Cuisinart forged prep set. i'm looking to hear from those that really know what i mean. i want to be able to slice a piece of meat without any trouble at all. what's good out there?

All knives need an occasional sharpen... especially Henckels and such. If you buy a really cheap set they usually last longer without sharpening. Do yourself a favor, buy something like the Henkel 3 knife Classic set ($70-100) as these three knives are all you really need and will last forever, 3 excellent knifes instead of a big set of ones that most you will never use. Santokus are merely a fad, have limited use for the inexperienced cook and will definitly need sharpening. But if you do want cheaper the Cuisinart or Kitchen Aid sets are the way to go.

It's a good thing you said that money is not an issue as a good set of knives is an investment and properly cared for will last a lifetime. Now the first thing you need to know is that price does not always mean quality. Brand names also do not mean quality . Take Henkels for example, there are many different types out there. Avoid any Henkels International brand (the one with the one man on the logo). These are crap blades and they will not last. If you want a better blade, try a Henkel's 4 star, professional or another one that has the two men on the logo. Wusthof Trident knives are good. Sabatier knives are good (if you can find them). But for the absolute best, see if you can find yourself a folded, forged knife. When you go for a stamped knife it will lose it's edge very easily, you can use the steel to "sharpen" it but every so often you will need to sharpen it using a stone. A forged knife is one that has been heat treated to make it harder, this keeps the edge a lot longer than the regular stamped blade. A folded knife is one with a mixture of hard and soft steel which gives it an incredibly sharp edge that will last longer than a forged knife. I will say that I have a chef knife made in this fashion and it's the absolute best that I have. It cost me $300, I've had it for the past 10 years and it's still as sharp as it was the day I bought it.

I have a Victorinox chef's knife that I love. Cost only $30, has not needed sharpening yet. Well recommended by folks at America's Test Kitchen. Also have their paring knife, and really don't need much else in the way of knives right now.

Santokus are great. My favorite knife. However, all knives need to be sharpened at some point. My local grocery does it for free while you shop, or the kitchen store does it overnight for $3 a knife.

Mine doesn't have a brand on it, but the full tang. I paid about $90 for it and have never regretted it.

I have been pleased with Cutco. www.cutco.com. I think they eventually do need professional sharpening, but I have had mine for about a decade and thus far have not had to do so.

Wusthof knives are great--they're a little more expensive, but they last very long and require little sharpening.

I like Kücher Messer, Gourmet Traditions and Forever Sharp in that order too.

I have a set of J. A. Henckels from Germany. They are the best, and mine are about 140 bucks(U.S.)
