Sushi refers to raw fish and specially prepared vinegared rice. I love salmon, tuna, and sea urchin.

As for maki, the rolls with black seaweed wrapped around them. I think the "California Roll" is the most popular, but this is a western invention and not authentic japanese sushi. I like cucumber rolls and salmon rolls, or those with caviar or roe (fish eggs).

Sushimi, a third option, is prime cuts of uncooked fish flesh. Love salmon and tuna. Some people use Wasabi (green paste of horserasdish - hot) and Soy Sauce (salty) for flavorings.

Japanese food has a lot more to offer than just Sushi. I always start with a bowl of Miso soup. Try Sukiyaki or Terayaki for a cooked entree. Tempura is veregtable, shrimp or shell-fish fried up with a very fine bread crumb... decadent!

I haven't had any I did not like, so far. Of course I wont eat everything, almost though. I love raw tuna, very deep red tuna is the best !! And I am crazy about the ones with flying fish eggs !

the maki sushi made at the Marysville Buddhist Church. I've never seen it anywhere else. It has kampyo, tomago, sweet/salty pink powdered fish, seasoned shiitakef mushrooms... yum.

I personally LOVE...LOVE...LOVE California Rolls and Inari sushi. Those are the most common tho..but BEST!
