I worked with a black women at my last job that cooked real southern soul food. Ive never tasted nothing like it. Ive never liked sweet potatoes until ive tried hers. She cooked them all day in a crock pot, with lots of butter and I remember brown sugar. Can anyone help? It was for a Thanksgiving potluck.

This is not a crock-pot recipe, but still good - for both yams and sweet potatoes...

"Candied Yams" - 6 servings

4 yams or sweet potatoes; unpeeled
1 tsp. salt
1/2 cup butter or margarine
1/2 cup packed brown sugar
1 tbsp. grated orange peel
1/4 cup orange juice or water
1/8 tsp. ground cinnamon
Generous dash pepper
1/2 cup coarsely chopped walnuts (optional)

1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling; reduce heat to low. Cover; simmer 30-40 minutes until yams are fork-tender. Drain; cool slightly. Peel and quarter yams.
2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper. Heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.
SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole. Top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.

SOUTHERN SWEET POTATO PUDDING

Amount Measure Ingredient -- Preparation Method

1 1/2 c Grated sweet potatoes
1 cn (6 oz) evaporated milk
1/4 ts Mace
1/4 ts Ginger
1/4 ts Cinnamon
1 pn Of salt
1/2 c Sugar
1/4 c Butter, melted
2 tb Molasses
1 c Sweet milk
2 Eggs
3 To 4 tbsp bourbon whiskey
1 t Lemon juice

Preheat oven to 350 degrees. Beat eggs lightly, add
sugar, stir in potatoes and seasoning. Add milk and
butter. Bake in a 2 quart casserole 30 minutes, then
stir away from the sides, mix and bake another 30
minutes. Serve warm from the baking dish with Red
Currant Jelly Sauce. Serves 6 to 8.

Crockpot Sweet Potatoes

INGREDIENTS:
2 lbs. sweet potatoes, peeled and cut into chunks
3 cloves garlic, minced
3/4 cup apricot pie filling
3 Tbsp. butter, melted
1/3 cup honey
1/4 cup brown sugar
1/2 tsp. salt
1/4 tsp. white pepper

PREPARATION:
Place potatoes in 3-1/2 to 4 quart crockpot. Sprinkle with garlic. In medium bowl, combine remaining ingredients and blend well. Pour into slow cooker. Cover and cook on low for 6-8 hours or until potatoes are tender and glazed, stirring once during cooking time.
Makes 6-8 servings.

This is how i do my sweet potatoes ( this are not yams they are the orange potatoes but people call them candied yams)
for mashed sweet potatoes

4lg potatoes bake whole at 350 til soft to touch
peel when cooled use a potato masher mix in warm condensed milk sweetened or regular milk about 2cups w/ melted butter. use more if you want very smooth. and 1/4 cup orange juice i like the canned stuff dont add water just thaw it adds a zing and brings out the flavor of the potato and 1/2cup brown sugar packed if desired.
Candied Yams
4lg potatoes peel then slice or cube them (this depends what shape you want the potato when finished)
1/2cup cinnamon sprinkle though out
1/8 cup nutmeg same as above
1/2 stick of butter
1-2cups packed brown sugar
add all to a baking pan bake at 350 for 35-45 mins depends on size of potato pieces. add marshmallows (optional)at the last ten mins bake til mallows are melted and start to brown.. serve hot..

* 4 cups sweet potatoes, mashed
* 1/4 cup butter, softened
* 1/2 cup sugar
* 3 eggs, beaten
* 1/4 teaspoon salt
* 1/4 cup pecans or walnuts, chopped

PREPARATION:
In large mixing bowl, beat together yams, butter, sugar, eggs, and salt until fluffy. Turn into a 1 1/2-quart baking dish and sprinkle with pecans or walnuts. Bake at 350° for 45 minutes. Serve immediately.
Serves 6.

Yes, you cook them with butter, brown sugar or pancake syrup and pineapple. After they are cooked, you place them in a serving dish and place marshmellows on top and put in the oven until the marshmellows turn brown a little only. If you want to cook turnip or collard greens, all you do is cook them in a dutch oven with water, bacon or salt pork for about 2-3 hours. For corn bread, mix the package but put half a can of creamed corn in the mix. That corn bread will be so moist everyone will like it. It is a secret here in my town...
