I do a lot of stir-fry. It's nice because you can change it to make it taste different, but still get all your veggies. Use fresh veggies or frozen ones (I like the stir-fry mix of frozen veggies, just because it's fast). My favorite is to add about a half-bottle of sweet chili sauce to the stir-fry (just long enough to heat through). I've also used Thai seasoning mix, sweet n sour sauce, or teriyaki sauce. There's four different meals right there and they are more or less the same thing.... just a MUCH different flavor.
Veggie kabobs are a summertime favorite. I usually use zucchini, mushrooms, bell peppers, pineapple & onion. Brush it with butter or spray it with those salad spritzers or marinate it in a sauce... stick it on the grill... YUM!

Eat more veggie soups, especially homemade which really don't take all the long. I'm thinking more like puree type soups, not the hunks of veggies soups with noodles.
Use veggies in salads, in fact my favorite salad is all veggies, no lettuce.
Hide the veggies in unusual foods. For example last night I made a winter squash-kale-mushroom risotto. Yummy. (recipe I found on the web)
Make veggie lasagna...you can hide all sorts of veggies in one of those. For that matter, you can get veggies into spaghetti sauce easily.
Finally I used to make saurkraut chocolate cake........wait, the saurkruaut flavor disappeared and the cabbage kept the cake moist.........but it wasn't an efficient way to eat veggies..just delicious.

Frozen veggies are fine to use. They actually are often more fresh then "fresh" because they are frozen upon harvesting. veggies in the supermarket often are sitting out for days.
I like broccoli with some melted "butter", green beans with a little salt, steamed baby carrots.

Fresh veggies don't necessarily have to be in the same plate as the main course, but one idea does come to mind... Make out a nice little fresh vegetable platter with a dip... As we all know, people are constantly picking at those at parties and more times are the first tray to empty. Go with that, as an appetizer... you can even keep it out like a snack tray later on.

Well, I try to "play" around with veggies.
I usually steam broccoli and cauliflower (separately) and after wards, mix them together and pour a tad of Italian dressing over them. You can also add asparagus, black olives, onions..etc.. and make a nice salad.
The smart thing to think of is that if you buy fresh veggies, always steam them. Broiling is also good. Cut up some zucchini, bell peppers, yellow squash, mushrooms and lay them on a cookie sheet. Season with salt,pepper and put them in the broiler. You can put this over pasta.

I personally love the taste of most raw vegetables. I simply cut up my favorite veggies and make them into a wonderful salad every night. You get the benefits of all of the fiber and if you leave the skins on you get all of the nutritional benefits as well. Things like potatoes, yams etc I will either bake or steam.

Boil some of those little round potatoes; break open when soft and garnish with sea salt, pepper and a little butter with some parsley sprinkled on them for color. Get fresh asparagus and grill them; serve with drizzle of olive oil. Corn on the cob: fun and delicious. Use a variety of rice dishes to spice things up. Buy the pre-sorted green salads and use those as a starter. Cauliflower with cheese sauce is great and always popular.

We eat a lot of yellow squash and zuccini sauted with onion and a bit of garlic. Cook onion first, then add in the squashes and garlic, cook until soft. Another alternative is yellow squash cooked and add a can of yellow corn at the end and cook until corn is warmed thru. I love onion and mushroom soup cooked with veggie broth and add miso paste right at the end for a yummy asian taste. Butternut squash cut in half and baked with a bit of water in the dish until soft like a baked potato is good. Butternut squash also cut up and make a good fake french fry. Carrots chopped and cooked in a bit of veggie broth, add butter and paprika for a good sweeter taste. Good luck and enjoy the veggies!
