Monterey Jack, Asadero or Chihuahua cheese is what is used.
Mexican White Cheese Dip
INGREDIENTS:
1 cup cheese (Monterey Jack, Asadero or Chihuahua)shredded fine
4 oz. green chiles
1/4 cup Half & Half
2 tablespoon onion, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)
DIRECTIONS:
Put all ingredients in a double boiler and heat on medium.
Cook until melted and well blended, stirring occasionally.
White Beer-Cheese Dip
6 cups shredded Asadero cheese
1 small onion finely chopped
1 t. tabasco sauce or other commercial hot sauce
2-3 jalapenos, seeded and chopped very fine
2 T. prepared horseradish
2 cloves garlic finely chopped
1 cup beer
Combine all ingredients in a crockpot and stir. Cook on low until all ingredients are melted together.
Stir again and serve hot with warm homemade corn tortilla chips-for that restaurant taste.
Chile Con Queso (Chiles with Cheese)
1 cup shredded Monterey Jack
1 4 oz. can chopped, green chiles, drained
1/4 cup half and half
2 Tbls onion, finely chopped
2 tsp ground cumin
1/2 tsp salt
Heat all over low heat, stirring constantly, until cheese melts. Serve with tortilla chips.

My absolute favorite is this 1 bar of Cream Cheese 1 Can of hormel chilli (with beans) and shredded mexican (4-cheese) cheese lol basically you spread the cream cheese along a regular bowl sorta layering the bowl, if that makes sense. Pour the chili in, even out so not much cream cheese is exposed (bubbles up in microwave) and microwave it for 1 min and 30 seconds. put a layer of the shredded cheese on top and microwave for another 30 seconds. It love this so much better than the velveta. Plus with our microwave it doesnt get to the cream cheese as well adn its stil a little cold, and the cold cheese with the hot chilli is sooo perfect. lol I wish I had some... anyways have fun experimenting and enjoy!

Don't know wher you live, but Walmart sells a white cheese with peppers, "El Viajero brand" in the mexican section of the refrigerator and you just add milk and is almost the same as the one in the restaurants.

If you can't find that, use white cheese (oaxaca is good) milk, sour cream and green pepers to do it yourself

The closest I've come to the cheese they serve at Chi Chi's is Velveeta with salsa added. I just pour both in a bowl, cook in the microwave till melted, then add chips. Awesome!!

It's chili con queso (chili with cheese). I make mine using a 2 lb. loaf of Velveeta, pour in just enough milk to cover the bottom of the pan you're using, 2-3 cans chopped green chile, 1 Tbsp chopped jalapeno and 1 medium tomato diced!! Good stuff.

If you have a super walmart where you live...go there and in the cheese department..they have a cheese that comes in a block...its called melting cheese. It is chihuahua cheese (?sp)....it comes eithr plain or with peppers in it. Melts very easy and is yummy.
