Appetizer - Oysters Irene
12 large oysters on the half shell
1 cup pancetta or bacon, chopped
1 red bell pepper, roasted and chopped
1 cup shredded Parmigiano-Reggiano
3 tablespoons fresh flat-leaf parsley, chopped
Juice of 1 lemon
1. Place oven rack 5 inches away from the heat and set oven to broil. Place oysters on a baking sheet. Divide bacon equally among the oysters. Transfer to the oven and broil until bacon is light brown and crispy, about 3 minutes.
2. Remove oysters from oven and top with red pepper and Parmigiano Reggiano. Return oysters to oven and continue broiling until cheese has browned, about 2 minutes.
3. Remove from the oven and transfer oysters to a platter. Sprinkle platter with chopped parsley and lemon juice. Serve immediately.
Main Meal - Boiled Lobster w/ drawn butter, boiled red skinned potatoes and corn on the cob (crisp).
Desert - Pistachio Crepes - very simple!
Make up some crepes, make up some jello pistachio pudding (add some crushed pistachios). Then put some pudding on the crepe and roll in a log... Top with whipped cream and sprinkle some more crushed pistachios on top.

The ones I have with family and friends. It could be bread and cheese or oysters and champagne: for me, it's the company that counts.
