Chocolate Covered Cherry Pie
The combination of chocolate and cherry make this a real sweet treat. Invite some friends over to share this dessert.
1 graham cracker pie crust
6 oz. Semi-Sweet Chocolate Morsels (1 cup)
1 can (14 oz.) Sweetened Condensed Milk
1/2 tsp. salt
1 can (21 oz.) cherry pie filling
1/2 tsp. almond extract
8 maraschino cherries, stemmed
PREPARE a graham cracker pie crust. In a saucepan, over low heat, bring chocolate chips, sweetened condensed milk and salt to a boil, stirring continuously until blended.
MIX in cherry pie filling and almond extract. Pour into the prepared graham cracker pie crust.
CHILL at least 2 hours. Garnish with 8 stemmed maraschino cherries.

Old Fashioned Fudge Pie
2 eggs, beaten
1 1/4 cups sugar
1/4 cup plain flour
1/4 cup cocoa powder
1 stick of butter, melted
1 teaspoon vanilla
Pinch of salt
1 unbaked pie shell
Preheat oven to 350°. Combine all ingredients and pour into the unbaked pie shell. Bake until set, about 30 minutes. If not set in that length of time, bake 5 minutes longer and remove from oven. Cool before cutting.

KILLER GOURMET BROWNIE SUNDAES
DEEP DISH BROWNIES
3 sticks "I Can't Believe It's Not Butter" melted (or 2 ICBINB and 1 real unsalted butter, but no more)
3 tsp. vanilla
3 cups sugar
6 large eggs
1 tsp. salt
1 tsp. baking powder
1 cup cocoa powder **
1 1/2 cups flour
Optional: Mini chocolate chips, sliced almonds
Spray 9x13 metal pan with PAM and preheat oven to 350ºF. Mix melted butter, vanilla, sugar and salt well. Add eggs and stir well after each one. Add cocoa powder and blend. Then add in half the flour, mixing well, the baking powder and the rest of the flour. Pour into prepared pan. Should be the consistency of thick cake batter. Top with about 4-6 oz. of mini chocolate chips (semi-sweet) and enough sliced almonds to cover the top generously. Bake for 40 to 45 minutes until the edges just begin to curl away from the sides of the pan.
When cooled completely, cut into squares. Serve with Haagen Dazs vanilla ice cream and Hershey's Classic Cocoa Sauce, topped with fresh raspberries and garnish with a sprig of mint.
HERSHEY'S CLASSIC COCOA SAUCE
6 Tsp. Hershey's cocoa powder
1 cup sugar
3/4 cup evaporated milk
1/4 cup unsalted butter (no subs)
1/8 tsp. salt
1/2 to 1 tsp. vanilla
Combine cocoa and sugar in a saucepan; blend in evaporated milk. Add butter and salt. Cook and stir constantly until mixture just begins to boil. Remove from heat; add vanilla. Serve warm over ice cream or other desserts. YIELD: 2 cups

One-Bowl Chocolate Mocha Cream Cake
From Cooking Light
Cake:
2 cups all-purpose flour (about 9 ounces)
1 cup granulated sugar
1 cup packed dark brown sugar
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup reduced-fat mayonnaise
3 tablespoons canola oil
1 cup hot strong brewed coffee
2 teaspoons vanilla extract
1/3 cup semisweet chocolate morsels
Cooking spray
Mocha Cream:
1/4 cup boiling water
1 tablespoon instant coffee granules
1 (7-ounce) jar marshmallow creme
1 (8-ounce) container frozen light whipped topping, thawed
1/3 cup light chocolate syrup (such as Hershey's Lite Syrup)
Preheat oven to 350°F.
To prepare cake, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 6 ingredients (through salt) in a large bowl. Add mayonnaise and oil; beat with a mixer at low speed until well blended. Slowly add brewed coffee and vanilla; beat with a mixer at low speed 1 minute or until well blended. Stir in chocolate; pour batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.
To prepare mocha cream, combine water and coffee granules in a large bowl; stir until granules dissolve. Add marshmallow creme; beat with a mixer at low speed until smooth. Fold in whipped topping. Spread mocha cream over top of cake; drizzle with chocolate syrup. Chill until ready to serve.

Chocolate Pudding Cake
3/4 cup of sugar
1 cup plain flour
1/4 teaspoon salt
2 teaspoons of baking powder
2 Tablespoons cocoa
½ cup milk
1 teaspoon of vanilla
3 Tablespoons melted, cooled, margarine
Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish. A large Pyrex bowl is good, too, or a 9"x9" dish.
TOPPING:
½ cup of granulated sugar
½ cup brown sugar
1/4 cup cocoa
Mix topping sugars and cocoa together and sprinkle dry ingredients over batter.
Pour 1 ½ cups of tap water over all. DO NOT STIR!**
Place in oven and bake at 350ºF for 45 minutes or until topping is done.
**(In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom.IT LOOKS WEIRD before baking, but ti works! )
Serve in bowls with spoons. Serves 6-8 people. Good with vanilla ice cream or cool whip.

This is so easy and so good! Purchase a chocolate cookie crust (like Oreo) and a carton of softened chocolate ice cream. Put the ice cream into the pie shell, cover and freeze. Before serving, pour Godiva chocolate and/or Chambord liqueur over each slice.

I'm serious, you only need 4 ingredients and these are sooo easy to make and very, very, yummy!
Easy chocolate Truffles
1 (8 ounce) package cream cheese, softened
3 cups confectioners' sugar, sifted
3 cups semisweet chocolate chips, melted
1 1/2 teaspoons vanilla
DIRECTIONS
In a large bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls.
Extra idea to spruce them up if you want to:
Roll truffles in ground walnuts (or any ground nuts), cocoa, coconut, confectioners' sugar, candy sprinkles, etc.
To flavor truffles with liqueurs or other flavorings, omit vanilla. Divide truffle mixture into thirds. Add 1 tablespoon liqueur (almond, coffee, orange) to each mixture; mix well

Chocolate Delight----1 stick margarine, softened; 1 cup flour; 1/2 cup chopped pecans (optional). Mix these and spread in a 8-in square pan. Bake @ 350 for about 15 min.
8 oz cream cheese; 1 cup powdered sugar; 2 cups Cool Whip. Cream together cream cheese & sugar. Stir in Cool Whip and spread over cooled crust.
Mix 1 large pkg chocolate instant pudding according to directions on pkg. (I usually use less milk than it calls for to make the pudding thicker.) Spread this over the cream cheese mixture. Top with Cool Whip and pecans, if desired.
Easy to make and very yummy!!!

Quick and tasty. Make some chocolate pudding, mix in a container of the whip cream. Then put it in a frosting decorating bag and pipe it into some champagne glasses and chill. it's like a chocolate mousse and quick and easy.

Parfaits...
2 boxes of instant pudding (Whatever flavors you prefer)
I can of whipped cream
Store bought angel food cake
4-6 glasses
First, make pudding according to directions on the box and set off to side.
Then, cube the angel food cake.
Start to layer the pudding in the glass... (Like chocolate pudding, other pudding flavor, angel food cake... ect.)
When you have the desired amount of layers, top off with the whipped cream.
And if you really want to you can add chocolate chips to the layers or, strawberries, raspberries... whatever you see fit.
Super easy... super versatile...ENJOY!

You could make a chocolate creme pie. You can buy a chocolate grahm cracker crust and fill it with instant pudding/pie mix. Let it set and add some whip creme when serving.
SO SIMPLE- but looks nice.

Marquise of Chocolate
1 lb bittersweet chocolate, chopped
1 cup butter, at room temperature
1/4 cup sugar
1 tablespoon brandy (optional)
6 large egg white
8 large egg yolks
Pinch of salt
Butter 8x4 loaf pan, line with 2 sheets of plastic wrap, one lengthwise, one widthwise, leaving an overhang of several inches. Melt chocolate and butter in a large heatproof bowl set over nearly simmering water. Whisk til smooth. Whisk in the sugar & brandy if using, until well blended. Remove bowl from heat. With an electric mixer on low, beat in the egg yolks one at a time, beating well after each addition and scraping down sides of the bowl. Clean beaters well. In clean bowl beat egg whites with salt at medium high speed just until stiff peaks form. Fold egg whites into chocolate mixture by thirds. Transfer mixture to prepared pan, pushing it into corners. Smooth top. Cover with overhang. Wrap tightly in foil. Freeze for 6 hours or longer.
To serve: unwrap, run table knife around edges. Turn out onto a serving platter. Cut into slices with knife dipped in warm water and wiped dry between slices.
