Lasagna is a good dish that can spread, especially if you add a salad and breadsticks. Brownies and ice cream make a great dessert.
Lasagna can run about $10/ tray, but it feeds 8-10.
Salad $5 for two bags of greens and a tomato
Breadsticks $3 for two cans of refrigerated dough
Brownies $4 a tray
Ice cream $5
That's $27, and my estimates may be a little off, but you're definitely under the $50.
Drinks should only run a couple of bucks for 3 2 liter bottles.

Make a big pot of Vegetable Beef soup (use hamburger and the already cut up frozen vegetables, beef broth, tomatoes, etc) served with crackers. Chances are you'll have some of the suff already in your pantry. Also make a simple dessert by baking cookies (slice and bake) or make a banana pudding (fairly inexpensive) Good luck! (HEY! I just thought about spaghetti too! It's cheap!)

What kind of things do you already have on hand? I would start with that.

I would make chili, cornbread, a green salad and buy a cake mix. A stew would also be good. Mexican type cooking is affordable especially for that many people. I have a really good mexican casserole that can be easily doubled.

This of course being on a budget. Off budget I could come up
with things fancier.

KING RANCH CHICKEN CASSEROLE

2 cups chicken breast meat, cooked and chopped
1 can RF cream of mushroom soup
1 can RF cream of chicken soup
1 can Rotel tomatoes (I use the “milder” version)
8 corn tortillas cut in fourths
1 cup Sargento light shredded Mexican Cheese
1 onion chopped
4 cloves garlic minced
1/2 cup chopped celery
salt and pepper to taste

Saute onion, garlic and celery in a nonstick pan coated with cooking spray. Add soups and Rotel tomatoes and heat. Add salt and pepper to taste. Spray 9x12 pan with cooking spray. Layer 1/2 of tortillas in bottom. Pour 1/2 of soup mixture over tortillas. Sprinkle 1/2 chicken and 1/2 cheese over soup mixture. Repeat layers ending with cheese. Cover with foil and bake at 350 degrees for 40 minutes . Uncover and cook additional 10 minutes.

6 servings

If you want to make this less spicy, substitute Del Monte Zesty Tomatoes with Green Chilis for the Rotel

I cook chicken breasts in a crockpot. I cover them with salsa and cook on low for 4 hours. It's tender and easy to shred and really flavorful. Add mexican rice and beans to round out the menu and use the money you saved to make or buy a great dessert.

Tacos or enchilada's. Supermarkets offer wide varieties of kits and sauces. The ingredients are cheap enough and go a long way. Make cookies or a Betty Crocker cake for dessert. Good luck!

Hi,
Keep it simple and your money goes farther. Like.. steaming fresh veggies, those are cheap. Make steamed green beans not too soft, and then sprinkle them with some soy sauce before serving. Fantastic and fancy. Place them lengthwise int he plate and throw some almond slices on them. FANCY but so cheap!!!

Ok.. so that is like 5.00

Now, take some ground hamburger, couple cans of mushrooms, an onion, cream of mush soup, sour cream and make some strognoff.... then make some RICE and serve that. You can make this for 15.00 for that many people.

Throw in a bagged salad. or two... 5.00

Dessert.... buy frozen eclairs or something.. you have plenty left for a splurge.

And for drink... serve lemon water.. its nice and lemons are cheap!!!!

THAT is a nice meal. easy and quick. Everyone loves stroganoff.
