Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
Supernachos
in a pan layer refried beans, hamburger, green chilies, green onions, cheese, and enchilada sause. then you eat it with tortilla chips.
Maple-Chipotle Barbecue Sauce
MAKES ABOUT 1 CUP
This sweet and smoky barbecue sauce is the perfect gift for die-hard winter grillers. Refrigerate it for up to two weeks.
INGREDIENTS
3 large chipotle chiles in adobo, stems discarded
1/4 cup ketchup
1/4 cup pure maple syrup
1 cup low-sodium chicken broth
1/8 teaspoon ground allspice
1 tablespoon vegetable oil
1 medium onion, minced
2 large garlic cloves, minced
Salt and freshly ground pepper
1 tablespoon fresh lemon juice
DIRECTIONS
1.In a blender, combine the chipotles with the ketchup, maple syrup, broth and allspice and puree until smooth.
2.In a medium saucepan, heat the oil until shimmering. Add the onion and garlic and cook over moderately high heat until golden, 5 minutes. Add the chipotle puree. Season with salt and pepper. Cook over moderate heat until thickened, 15 minutes. Stir in the lemon juice. Transfer to a bowl and let cool.
Chinese Walnut Chicken
Chicken breasts strips are stir-fried with scallions, ginger and garlic, and seasoned with bourbon and soy sauce.Ingredients:
• 1 teaspoon cornstarch
• 1 Tablespoon water
• 1 egg white, beaten
• 4 skinless, boneless chicken breasts, cut into one-inch cubes
• 3 Tablespoons soy sauce
• 1 Tablespoon bourbon
• 1/2 teaspoon sugar
• 4 Tablespoons oil
• 3 whole scallions, cut into 2-inch slivers
• 2 slices fresh ginger, minced
• 1 medium garlic clove, minced
• 3/4 cup coarsely chopped walnuts
• Hot cooked rice
Method:
In a bowl, mix together cornstarch, water and egg white. Add chicken and toss until thoroughly mixed. In a small bowl, combine soy sauce, bourbon and sugar. Set aside. Heat a wok or large heavy skillet over high heat until a drop of water "skittles" across and evaporates immediately. Add 2 Tablespoons of oil, swirl, and add chicken. Quickly stir-fry 3 to 5 minutes or until no pink shows. Quickly remove from pan and set aside. Reduce heat to medium-high and add the remaining oil to pan. Add scallions, ginger and garlic; stir-fry for 1 minute. Return chicken to pan. Add soy sauce/bourbon mixture and cook, stirring, about 1 minute. Stir in walnuts, mix well and serve with hot cooked rice.
Notes:
One tablespoon of bourbon is the secret ingredient in this recipe. But since nobody in our family drinks, I buy the smallest bottle of bourbon possible and keep it in my seasoning and flavoring cabinet among the vanilla extract, maple syrup and spice blends. It won't spoil and keeps forever.

I am a guy. People say comfort foods you can't go wrong and these people are correct. Fried chicken, buffalo chicken, loaded potato skins, steak. Personally I like Indian and Italian food and different stuff. So if you know if the guys like spicy or sweet or whatever kind of food then go by that and make it simple, tasty, and one of the courses has to have meat. Oh ya meatloaf is tooooo good

Puerto Rican Chicken and Rice
4 pounds whole chicken
2 teaspoons olive oil
2 cloves garlic, minced
3 teaspoons oregano
1 teaspoon vinegar or fresh squeezed lime juice
2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1 clove garlic, smashed
1 onion, coarsely chopped
1 stalk celery, cut up
5 sprigs cilantro
chicken neck, back and wing tips
1 onion
2 green bell peppers, cored and seeded
several sprigs of cilantro, to taste
3 tablespoons olive oil
1/2 cup salt pork, diced, optional
8 ounces tomato sauce
1 1/2 cups beer, optional
2 cups rice
18 pimento stuffed green olives, coarsely chopped
3 teaspoons capers
1 cup frozen peas, defrosted
Cut chicken up into 2 thighs, 2 drumsticks, 2 wings, 2 wing tips,
2 breast halves and a back piece. Reserve the back, neck and wing
tips for the stock. Mix all the ingredients for the Adobo and rub
over the remaining chicken pieces. Refrigerate overnight, or let
sit, covered, at room temperature for 1 hour.
In a large pot put the neck, back and wing tips in 4 cups water
with garlic, onion, celery and cilantro. Bring to a boil, reduce
heat, and simmer, uncovered, for 2 - 3 hours. Strain out solids
and return stock to pot.
Coarsely chop onion, bell peppers and cilantro and place in a food
processor and process until finely chopped but not watery, about
8 - 10 pulses.
Heat the oil in a large Dutch oven. Add the salt pork, if using,
and cook 3 - 5 minutes. Add chicken thighs and drumsticks and cook
5 minutes. Add remaining chicken pieces and cook another 10 minutes,
turning to brown on all sides. Remove and set aside. Add onion/bell
pepper mixture to pot and cook 5 minutes. Add tomato sauce, peas
then 3 cups chicken stock (or 1 1/2 cups stock and 1 1/2 cups beer
if using) and the rice. Bring to a boil, return chicken to the pan
and add olives, capers and salt, if necessary. Reduce heat and
simmer, uncovered, until all the surface liquid is absorbed.
With a wooden spoon stir rice up from the bottom. Reduce heat to
very low, cover and cook for 1 hour, stirring every 15 minutes to
turn the rice up from the bottom of the pan.
Turn chicken and rice out onto a plate and garnish with pimento
strips before serving.

buffalo chicken dip....a football favorite...
INGREDIENTS
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as Franks® Red Hot®
1 1/2 cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers
DIRECTIONS
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
BABY BACK RIBS
INGREDIENTS
2 pounds pork baby back ribs
1 (18 ounce) bottle barbecue sauce
DIRECTIONS
Tear off 4 pieces of aluminum foil big enough to enclose each portion of ribs. Spray each piece of foil with vegetable cooking spray. Brush the ribs liberally with barbeque sauce and place each portion in its own piece of foil. Wrap tightly and refrigerate for at least 8 hours, or overnight.
Preheat oven to 300 degrees F (150 degrees C).
Bake ribs wrapped tightly in the foil at 300 degrees F (150 degrees C) for 2 1/2 hours. Remove from foil and add more sauce, if desired.

boiled potatoes= peal potatoes dice up into 1" pieces put in pot add salt and couple sppons of shorting pour in water to cover the potatoes boil until soft and cook the water down until its not too thin in the pot. Corn bread= mix meal and 1/3 part flower then add one egg with some shorting then add small amount of butter milk then stir you may have to add buttermilk until you get the right consistency. then spray an iron skillet and pourn in your bread mix and bake at 425 degrees until dark brown. this is enough for me now. if you like this you may e-mail me for more advice at roy40372@yahoo.com
