Flan would be an excellent dessert, just look up a reciepe online or in any regular cookbook.

Flan is the best Mexican dessert. IMHO
For an appetizer, the best I've ever had was just a sampling of fresh cut raw fruits and veggies, like avacado, mango or even tomato - a fresh homemade salsa with chips would work as well, I think. Kind of a clean cool start to a spicy hot meal.

I suggest something very simple that won't take long to prepare nor will it take work when you arrive. How about for an appetizer some cream cheese pinwheels? They sell them at Sam's premade where all you do is thaw them out. Or you could make something like chicken crustinis. You can put them on tortilla wraps and cut them into fours or put them on sliced small bread. It's just some grilled chicken ( you could get this in the frozen section) some onions, red and green peppers sauteed together and some provolone or mozzerella on top. I'ts YUMMY

I have a simple recipe for an appetizer:
Get flour tortillas, spread with soft cream cheese layer some with salsa, and others with Mexican blend cheese and diced jalapenos. Then, roll them up, and cut them. Use a toothpick to hold them together and serve. (if you don't want the jalapenos....substitute with guacamole).

APPETIZERS
guacamole:
* avocados (They are ripe when they'll yield just a little bit to the pressure of your thumb. You'll feel like what's under the skin has the consistency of firm butter - it yields some to pressure, but isn't excessively soft). Peel the avocados and mash them with a fork or one of those wire potato mashers. Guacamole is not supposed to be totally smooth. Add, to taste:
* salt
* couple of squeezes of lemon or lime juice
* optional: finely chopped serrano peppers; finely minced onion; finely diced tomato; finely chopped cilantro
Serve with chips.
Salsa:
* 14-oz. can of diced tomatoes
* Several fresh serrano chiles, chopped
* About 3 cloves of garlic, chopped
* About half a bunch of cilantro, chopped
* Sea salt
Whiz this in the Cuisinart. Serve with chips.

I love Snickers Chimichangas-
Take a flour tortilla and soften it in the microwave under paper towels. Immediately wrap it around a Fun-Size Snickers bar. Place it fold-size down on a cookie sheet. Then brush it with melted butter. Bake at 350 until browned. Serve with ice cream. Yum.

flan is a good dessert also jello the one with milk and water layer them that's also good. for appetizers i would say some chips with guacamole chips or a nice salsa

Good question! Whenever I go to a Mexican restaraunt they bring out chips and salsa and they offer guacamole. also chicken and cheese quesidillas

take some biscuts (phillsberry) your spose to cook them for 8 minutes only cook them for 6 minutes dump them in sugar with cinnamon and let sand about 20 minutes mmm mmm gooood! mex snack
