If you're making/baking sweets at home try using Agave Nectar. I use it in just about everything to spare myself from the chemical-laden artifical sweeteners out there. It has a low glycemic level and when combined with carob chips, walnuts and whole wheat or soy flour makes one heck of a 'chocolate chip' cookie. My fiance uses it when he's making homemade ice cream and it's really good!

I sympathise as I'm on a specific diet too - I'm not diabetic but I have severe candida and I'm also a vegetarian. I cant tolerate anything sugary, processed or refined and I can't tolerate dairy either. I have to limit my gluten intake too. So yes I understand how you feel. You should be able to find mince pies and chocolate suitable for diabetics, as well as other sweets. Can you make a nut roast for christmas? Thats what I normally have. Sorry I cant be more help.

Try adding gluten intolerant too! That's my diet! but yeah it does suck and I sympathise. When I have been in hospital it's been a nightmare to be honest, in fact when I was in having my daughter I had to supply my own food for every meal except breakfast for 6 days!
You'd think that they'd be able to find something, jacket potatoes of course being everyones idea of a veggie meal after a salad of course, i just hope you get something decent. sorry i can't be much help :( but if it makes you feel any better i'm in the same boat food wise!

Doesn't anybody eat vegetables anymore? When you are a vegetarian you eat vegetables. Not pies, ice cream, cake, or meat! Whatever happen to mashed potatoes? corn? green beans? even stuffing can be made without dairy. How about putting some stuff on top of the salad? like walnuts or almonds? How about chili (try Mexican for Christmas!) or seiten/wheatmeat with gravy?
Yes, make sure you tell the dietician at the hospital that you are a vegetarian and see what they can get for you (like the stuff above). At the amount you are going to be charged to be in the hospital, you better get your money's worth!

You have a better chance of surviving by NOT eating those things. Vegetarians eat alot more then salads. Google diabetic vegetarian recipes.
