Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Vegetarian stuffed potatoes
Ingredients
4 medium russet potatoes (scrubbed and jabbed)
2 cans vegetarian chili (found with the regular chili)
1 cup shredded cheddar cheese
1 onion, chopped
2 tablespoons Mrs. Dash seasoning mix
1 tablespoon minced garlic
1 tablespoon ground cumin
1 dash of good balsamic vinegar (to personal taste)
Place all ingredients except potatoes and cheese in a pan in which you first put about 2 tblsp of olive oil.
Simmer for 10 or 15 minutes, until totally blended and onion cooks a bit.
Place potatoes, individually wrapped in paper towels, in microwave and nuke until mushy (soft when you squeeze the paper towels).
Remove and place one potato on each plate, slit and mash a bit.
Spoon hot chili mix over each, topping each with grated cheese.
You can add a spoonful of sour cream and some guacomole to make these really special and good, or be creative with your own ideas!

Red lentil loaf... also good with mushroom gravy!!
1 cup dried red lentils
1 cup rolled oats
1 1/2 teaspoons egg substitute or 1 whole egg
2 tablespoons water
1 cup cooked brown rice
1 cup grated carrots
2 tablespoons low-sodium tamari
2 scallions, chopped
2 garlic cloves, minced
1 teaspoon dried sage
1/4 cup dried breadcrumbs (optional)

Cook your lentils.
Prheat oven to 350°F Oil a loaf pan and sprinkle sides and bottom with a tbsp of oats.
Whisk egg replacer and water until light and foamy.
In a large bowl, combine the egg replacer and lentils with the remaining ingredients. Add the bread crumbs if you desire a firmer loaf.
Press mixture inot loaf pan and bake for 40 minutes. Remove from oven and let stand 5 to 10 minutes before slicing.
Serve with a red pepper sauce.

mixed greens w/ fresh tomatoes
1 bowl sliced green cabbage
2 cups sugar snap peas or
1 cup green beans
1 cup broccolli florets
3 pcs tomatoes, roughly chopped
2 tsp. sunflower oil or vegetable oil
3 cloves garlic, chopped
salt & pepper to taste
Procedure:
1. Saute' garlic in oil til golden brown.
2. Add in chopped tomatoes and cook for 1 minute.
3. Stir in vegetables except cabbage as they taste better not overcooked, cover and simmer until half cooked.
4. Add in the cabbage, salt & pepper and stir then cover and cook for another 2 minutes.
Hint: this recipe tastes better when not overcooked

Make your favorite ground beef recipe but substitute Boca ground crumbles, you'll never know the difference. I use Boca in tacos, pasta, and even sloppy joe's!

are you ovo-lacto? try a tortilla espanola -- serve it with crusty toast drizzled with olive oil and crushed tomatos spread on top. drink a bottle of cheap spanish tempranillo with it and you will think you died and went to spanish heaven. the whole is so much better than the sum of the parts.
