As "estee06" says, bad form to serve OVER rice, if you want it that way, make a proper "biriyani" (curry with rice dish).

You can serve it with rice on the side, (eastern-southern style), or to be eaten with pieces of chapati and/or naan (western-northern style) or a combination of the two. When I make curry dinner, if I have the time, (and enough guests) I like to make at least one curried meat, one roasted (tandoori) dish, a potato dish and a vegetable dish, a basmati rice pulao, raita and lots of chapatis. I put out knives and forks then I tell people that eating using the chapatis (or naan) is very common in India (as I like to do) and then I let them do whatever the hell they want!

I am an Indian and this is how we have curry -

1. With Rice or Rotis - doesnot matter. But donot serve over the rice - that is a big no-no. Serve in a bowl and let the person who is being served decide how he wants to have it. Usually accompanies by some side dishes like papads, raita (yogurt based salad) and an array of other dishes, usually non-curry based dishes, (example - fried spicy potatoes)

Indian curry - on basamati rice
Japanese style curry - on sticky rice
English style Indian curry - on rice with a generous helping of mango chutney

I also like a fresh banana with the spicier curries - a tradition my husband brought back from Hyderabad

Make your sauces with Channa flour. The very best way to cook boneless skinless chicken is to take your favourite curry PASTE, Pataks for instance is my favourite, spread it over the exposed top of cic breast thinly ,bake in oven .The cic may need to be drained of fluid along the way as it will create its own juices to cook in. The finished cic is good hot our the next day in a salad cold etc.
