Chickpea Sandwich Filling
INGREDIENTS
1 (19 ounce) can garbanzo beans, drained and rinsed
1 stalk celery, chopped
1/2 onion, chopped
1 tablespoon mayonnaise
1 tablespoon lemon juice
1 teaspoon dried dill weed
salt and pepper to taste
DIRECTIONS
Drain and rinse chickpeas. Pour chickpeas into a medium size mixing bowl and mash with a fork. Mix in celery, onion, mayonnaise (to taste), lemon juice, dill, salt and pepper to taste.
Taverna Veggie Sandwiches
Ingredients
1 large eggplant, sliced lengthwise into 1/2-inch-thick pieces (4 to 8 slices total)
1/4 cup roasted garlic oil*
3 medium tomatoes, sliced in 1/2-inch-thick slices
4 large slices sourdough, Italian, or French bread, about 3/4 inch thick
2 tablespoons snipped fresh oregano
1/2 cup crumbled feta cheese (about 2 ounces)
Directions
1. Place eggplant slices on a lightly greased, foil-lined baking sheet; brush with a little oil. Bake, uncovered, in a 450 degree F oven for 10 minutes; add tomato slices to baking sheet, brush lightly with oil. Bake about 5 minutes more or until vegetables are just tender and eggplant is lightly browned. Lift foil with vegetables from baking sheet; set aside to cool slightly. Place bread slices on the same baking sheet. Brush the top side of each bread slice with some oil. Bake in the 450 degree F oven about 4 minutes or until lightly browned.
2. For each sandwich, place each bread slice browned side down. Brush each unbrowned side with some more of the oil. Top each bread slice with some tomato slices and 1 or 2 slices roasted eggplant. Place more tomato slices atop eggplant. Sprinkle sandwiches with oregano and feta cheese. Makes 4 servings.
*Note: Roasted garlic oil is a flavored olive oil that's available in specialty sections of many supermarkets. If unavailable, do not attempt to make your own flavored oil; only those prepared commercially are sure to be safe to eat. Instead, substitute 1/8 teaspoon garlic puree or minced garlic and 1/4 cup salad oil.
Veggie and Cheese Subs
Ingredients:
• 1 large zucchini, cut into 1/2-inch chunks
• 1 large yellow summer squash, cut into 1/2-inch chunks
• 1 medium onion, cut into 1/2-inch chunks
• 1 medium red sweet pepper, cut into 1/2-inch chunks
• 1 medium eggplant, cut into 1/2-inch chunks
• 2 tablespoons olive oil
• 1/2 teaspoon garlic powder
• 1 teaspoon dried Italian seasoning, crushed
• 1/2 teaspoon salt
• 2 tablespoons balsamic vinegar
• 6 (1-oz.) slices mozzarella cheese
• 6 kaiser rolls, halved
•
Method:
Preheat oven to 400 degrees. Line an 11X15-inch baking pan with foil; spray foil with nonstick cooking spray. Place vegetables in a medium bowl; add olive oil, garlic powder, Italian seasoning, salt, and vinegar. Toss to coat. Spread vegetables in a single layer in the prepared baking pan. Roast for 15 to 20 minutes until soft and starting to caramelize. Divide vegetable mixture evenly among rolls; top with cheese slices. Wrap sandwiches in foil. Return to oven for 5 to 7 minutes or until cheese is melted and rolls are heated through.
Notes:
The recipe makes use of summer?s bounty in a veggie pita/pizza. The idea for this tasty dish came about last year when my gardening efforts were more successful than I imagined. We ate this throughout the summer, often grilling the veggies over the barbeque.

Best way to make anything tasty is to smoke a big joint first.
Anyway, being a butcher, it is hard for me to recommend any vegetarian sandwich, but, since you asked, try marinating a large portabello mushroom cap in Italian dressing (or any other marinade you prefer), them grill it. Put it on some ciabatta or other crusty bread, top with roasted red peppers, some artichoke hearts and some sprouts (broccoli sprouts work good if you can find them.)

Cucumber, Cheddar and marmite on fresh granary bread. Vegan version use engivitta instead of cheese.
Beetroot and really strong Cheddar is pretty special too, though I've not found a vegan substitute for strong cheese.

hoagie rolls or french rolls
baked beans(veg friendly kind)
lay's natural country barbeque chips
put baked beans inside hoagie or french roll
then put the chips inside also
tis is a really tasty sandwich i made up by myself
to make good sandwiches yourself get creative,put stuff that normally wouldn't go into a sandwich or stuuf you wouldn't think of putting in a sandwich like cooked veggies,beans,raw veggies only, maybe even fruit?

Take a few roasted peppers (the kind in a jar), slices of soy mozzarella cheese, Roma tomatoes Annie's organic balsamic vinegar dressing, romaine lettuce and put it on your favorite whole wheat tortilla.

Get decent bread though`.
white bread but Not slimy sliced white.
Sorry I didnt realish this was in the veggie section,
try swapping the polloni with some Good crisps like Kettle's chips. Add some hot sauce.

i really love cheesey sandwiches. i would say that really good melt would be:
Cheese Melt
cheese(whatever kind)
fresh tomatoe
onion
bread(whatever kind you want)
1. dice onion
2.sprinkle onion over 1 slice of bread.
3. slice tomatoe
4.place sliced tomatoe on bread, depending on size of bread, size of tomatoe,or how much you like tomatoe.
5.slice or grate cheese
6.place or sprinkle cheese over tomatoe(as much as you want)
7. place foil and put into broiler until cheese is melted or until whatever you like it at.
no if you're a vegan a yummy sandwich would be:
Salad Wrap
spinch tortillas (or whatever you like best)
lettuce (i like romain hearts but you can use whatever you like)
a nut of somekind (pick you favorite i really like walnuts or pine nuts for this sandwich)
any other vegetables or condiments you like to add to a salad.
1.take a spinach tortilla and place cut up lettuce on it, just do a stripe down the middle of the tortilla.
2.put on the rest of the stuff you like on a salad.
3. sprinkle nuts over it.
4 begin to fold tortilla.
5. fold bottom of lettuce stripe up abput an inch.
6.fold over right side of tortill until a small part of it folds over the corner of the first fold.
7. roll right side until all the way rolled up.
8.or yopu can just roll it up however you want it to but this is the best way to make sure nothing falls out.
9. if you are not vegan you can add diced hardbol=iled egg to the wrap.
and then the classic quesadilla:
tortilla
quesofresco cheese
1.sprinkle cheese over tortilla.
2. melt cheese on toritilla
also this isnt really a sand wich but it tastes so good it's just zuccini and provalone cheese melted over it, it is really tasty!

Assuming you eat eggs, you can make a Morningstar Farms fake bacon BLT with some avocado. Maybe even throw that bad boy on a croissant with lots of black pepper and mayo. If you don't do eggs, try it with cucumbers or something.

Good white brown what ever kind of bread, depending if you have teeth or not, banana and crisp any flavour but salt and vinegar may not be the best choice. Butter bread, slice banana add crisp you can even toast it if you are feeling really adventurous.

Vegetarian cheese with grated apple mmmm!! Turkey flavoured Quorn TM /other sliced meat substitute and stuffing, Hummus and salad. Pickle and salad, Tomato and herb pate. Coleslaw with peppers , paprika and a little chilli. I hope you like them!!!!!!
