here is a basic colombian chicken recipe...for class..you could prepare then place samples on toothpicks or fun skewers...
INGREDIENTS
1 (3 pound) whole chicken, cut into pieces
1 lemon, juiced
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 teaspoon paprika
1 (2.25 ounce) can sliced black olives, drained
1 large onion, chopped
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 1/2 cups orange juice
DIRECTIONS
Place chicken pieces in a bowl. Sprinkle with lemon juice, cover, and marinate at least 30 minutes in the refrigerator.
Preheat oven to 350 degrees F (175 degrees C).
Heat the olive oil in a skillet over medium-high heat. Mix the salt, pepper, and paprika in a small bowl, and sprinkle over the chicken. Place chicken in the skillet and quickly brown on all sides. Transfer chicken to a baking dish. Distribute olives, onion, green bell pepper, and red bell pepper evenly in the baking dish. Pour orange juice over all.
Cover with aluminum foil, and bake 45 minutes in the preheated oven, until chicken juices run clear.
here is an alternative...plantain chips...
vegetable oil for deep frying 1 large green plantain, peeled and cut into 1-1/2 inches slices salt
1 Pour enough oil into a deep fryer or saucepan to fill it to a depth of 2 to 3 inches. Heat to moderate, 325 F. on a frying thermometer. Drop in the plantain slices and fry until tender, about 5 minutes. Lift out and drain on paper towels. Cover with wax paper and press until each is about 3/4 inch thick.
2 Raise the temperature of the oil to hot, 375 F. on a frying thermometer, and fry the slices until they are brown and crispy on the outside, tender inside, a minute or two. Traditional cooks dip the slices in cold, salted water before this second frying to make them crustier. Sprinkle lightly with salt before serving.

empanadas. they are kind of beef paties, sorry, although im colombian i cant cook colombian food to save my life. the empanadas are a colombian favorite. they consist of a round piece of dough that you fill with your choice of meat or chicken,a kind of beef/chicken stew with potatoes. once you put a small amount in thr round piece of dough, you fold the dough in half and sort of fold the edges,and then you deep fry it making sure you dont burn them or let the filling leak out. you can google the recipe. they taste great,even kids love them and some stores sell the little dough disks so all you have to do is make the filling and fry them(saves time if you dont have to make the dough your self. there is also something called arepas, supermarkets sell them ready made. they are kind of like tortillas and if you top them with melted butter and cheese(either grated mozzarella or the parmesan kind for the spaghetti) they taste great. good luck, sorry i couldnt be more helpfull.
