"Suzan" is actually an Olde English slang term for "person with nubs for hands"
A lazy person with nubs for hands didn't want to pick up dishes with his or her forearms, he/she just wanted to push a large tray on an axis around with his/her nubs.
People with nubs for hands, or "Suzans", made up a huge percentage of the English population during the 1600s. Opium was just making it's way across the seas from the Orient, and was particularly popular with Suzans.
What actually spawned the initial mass production of Lazy Suzans was a 3 month period in which 1 out of every 3 lazy (from opium) Suzans died because they refused to position dishes in front of them with their forearms. 33% died of starvation.
An anguished mother, rumored to have been named Suzan, came up with the idea after helplessly watching 2 of her children die of forearm laziness. Apparently her kids kept on saying they would only eat if their nubs could position the food in front of them. It was to much of an exertion to use the forearms.

Lazy Susan FAQs
Q: Why is it called a lazy susan?
A: Revolving serving trays have been around for centuries, and they used to be called dumbwaiters because they actually took the place of a servant in the dining room. It's not certain what caused the name to be changed from dumbwaiter to lazy susan; however, one theory suggests that servants were often named Susan. So, the term lazy Susan was essentially a servant who never had to go anywhere and could perform serving tasks from one location.

It is said that either Thomas Jefferson, Thomas Edison or Gail Borden invented the lazy susan. And the name is thought to come from a lazy house servant named, ironically, Susan. Edison claimed to have invented it for the phonograph. (Old style record player).
