I know ginger and cinnamon, nutmeg, allspice go well with peaches. But the Peach has been around for a long time, and has been in a lot of cuisines (chinese, persian, etc.) Western cuisine tends to have the same ones, over and over. So, what other spices work well with peaches? I'm probably going to use it to flavor a peach mead. Suggestions, Ideas? Thanks!

Well, almonds and cream for sure. Someone mentioned cardamom, I recently made a large catered dinner (50 people) featuring chicken breast in a sauce of mango, rum, cream, ground almond with cardamom and it was a raving success. I would suggest that what works for mango will work for peaches too. Oh, also pecan will go too! Rum and brandy!

There was an Indian peach salad I used to make from a recipe in a roommate's cookbook (the cookbook was by either Madhur Jaffrey or Julie Sahni, can't recall). It had fresh peaches seasoned with sugar, salt, lemon juice, cayenne, and cumin. It was very tasty.

Cayenne is good on them, especially with a little lime juice.
Or you can slice them and add olive oil and rosemary.
