Well I like apple cider vinegar with a little catsup on the side. Or a nice beef gravy (I suspect that's what YOU mean by "brown sauce") over top of the "fries." (I would NEVER mix the two!)
I live in Mexico and even worse than Yanks, they have NEVER heard of vinegar on chips (fries) but they do put lemon or lime juice on just about EVERYTHING so I tried THAT - works pretty well, actually, especially with catsup.....
What I can't stomach is mayo, PLEASE don't put that crap on yer chips! It is made out of nothing but refined white sugar, RAW eggs and about a 1000 poisonous preservatives. I have read somewhere that its not quite as bad for your body as rat poison, but I can't quite bring myself to believe it........

I tried chips with grated cheese on which was delicious. I also like them with butter melted over and now and again with curry sauce. Not the healthiest way of eating chips though!

IN ORDER:
1 gravy
2 chip-shop curry
3 melted cheese
4 tartar sauce
5 more chips
plus try all 5 at the same time and you have a variable taste explosion. or just try on there own with a sprinkle of sea salt and a nice bottle of chenin blanc.

i'm a fan of salt and vinegar on my chips when i have them. although for a change sometimes i go for gravy or curry sauce or mayo or garlic mayo.
There are some pretty wierd and wonderful sauces out there maybe just pick one of those and experiment.
Whats the worst that can happen!

In Montreal they call it Potine Your chips in a bowl ,basket with cheese curds and beef gravy poured on top. no wonder the french want to separate from thew rest of Canada no one else gets it. Still my favourite is Malt vinegar and salt { OH YEAH BABY }!!!!!

Put vineger on before the salt, the other way round the salt will get washed off.
While in France I learned to eat them as they do, with mayo on.
I think the Americans on here are thinking of what the Brits call crisps.

Mayo and I know this is weird but tartar sauce tastes good with it!
Obviously good 'ol vinegar and ketchup but nandos sauce is cool over chips
