mine always turns out red i dont know what im doing wrong

Well listen sweetie, if it turns out red, you are adding something RED!!!!!!

Here's an interesting tip - DON'T!

5-10 GREEN jalapeño or serrano chilis, (if you want your sauce milder take the seeds out first! - If you like the flavor of chili, use serranos!)

4-6 GREEN large "tomatillos" (Mexican GREEN tomatoes)

1-2 handfulls of cilantro leaves

3-5 (roasted) garlic cloves

1/2 chopped onion

2 tsp salt

2 tsp pepper

1 tsp ground cumin

1 tblsp MEXICAN oregano

Juice of 2-3 limes (or lemons)

place all of it in a blender and let fly. You will have a great "green chili sauce" no problemo.........

I have my mothers authentic recipe "chili Verde", I'll give to you tomorrow/soon, I'll do it an injustice if I try to remember & forget something. You are probably adding either tomato's or chili beans to give it a red color. For green chili it's best to use new mexico green chlili's, you'll need to roast them & peel them. puree them or just chop them up and add pork or beef with water/seasoning i.e.- cumin, garlic, mexican oregano, salt, pepper. To thicken it you can use some flower if you like. Put pinto beans on the side. Eat w/tortilla. That's just one way to make it.

For green chile you have to use all green ingredients, I always make chicken enchladas but I always use the green sauce it has so much more flavor. I use green tomatoes(tomitillas), green chiles diced, salsa verde, garlic salt, and onions. It is so good I always get complements on my sauce.

(mexican-oregano-hmmm?)
green roasted and peeled anaheim type chiles,tomatillos,onion,garlic,-jalapenos-or-serrano-chiles for extra heat -roasted-preferably-saute with a little oil to marry flavors and puree in blender return to skillet and add fine-diced onion -cilantro and cumin will compliment the sauce - dont add too much it will make it bitter ---heat and use with whatever or cook with whatever-

6 roasted jalapeno Chile, fried pork, 1 tomato, paprika, garlic salt pepper, lemon pepper to taste. simple but delicious.
