KRAFT KITCHENS TIPS
Makeover Savings
We've taken a favorite appetizer and made it over. We substituted PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese and KRAFT Mayo Light Mayonnaise instead of regular cream cheese and mayonnaise. Since these tasty appetizers are baked, they require less hands on time so that you can spend more time with your guests. This baked version saves 80 calories and 6.5 g of fat per serving compared to traditional fried Crab Rangoon.

For Mini Crab Rangoons
Use 24 won ton wrappers. Gently place 1 won ton wrapper in each of 24 miniature muffin cups sprayed with cooking spray. Fill evenly with crabmeat mixture and bake as directed. Makes 12 servings, two appetizers each.

I've been to several receptions, so here are my goods and bads: Good: When people conversate. The worst receptions are where no one really knows anyone else and just a few people are talking. That makes everyone feel awkward and bored. Give them something to talk about, or make sure you, as the bride, introduce people and start conversations. Bad: When the guests have no idea what's going on. I've been to weddings where nothing was clear: are there seating charts or not? Do we request songs or not? Are we eating or are we waiting to be served? Can we start drinking yet? You feel like you're just sitting there waiting. And it's really boring. So let people know somehow. Have someone make an announcement or print reception programs if you're doing a lot. Keep it lively. Food and drinks are definitely important and are good conversation starters. But all too often I've seen brides who are so worried about the placement of every single daisy that they never even considered the fact that no one knew each other and the guests had nothing to keep them entertained.

A quick and easy cheese ball is a pkg of cream cheese-8 oz, 12 oz of sharp cheddar cheese shredded, 1-2 TBSP worchestershire sauce, 1/2 of a onion, diced fine, and 2 small pjgs of Karl Buddig beef or dried beef in the jar-mixx all together with your hands and then roll in crushed walnuts. Only takes 15 minutes to make and you should refrig for at least 4 hours. freezes great and you can make on big one or a couple of small ones. Served at room temp is the best as the flavors marry together.
Yummm....

Also, popovers served with warm butter and some seasonal jams and jelly-awesome!
2 eggs-slightly beaten.
Add one cup flour
one cup milk
1/2 tsp salt.
beat until mixed-do not over mix.
Should make around 10 muffin size popovers.
Custard dishes are recommended but since I dont have any I just use a muffin tin.
Make sure they are well greased tins-greasing the top as well because these will get pretty large.
Bake @ 425 for 20 min,
insert toothpick into each one and then cook for another 20 min on 375.
So tasty and inexpensive.
Enjoy

Well there are standard things you can put out that you don't even have to really make. . .Such as cheese and cracker trays, olive tray, vegetables and dip, or even little cocktail hot dogs with assorted dips. Personally for appetizers I actually make, my favorite easy recipe is coconut shrimp. Just start off with some nice big shrimp, dip them in flour, then egg, and then a mixture of coconut and plain bread crumbs. Toss them in oil to fry for a few minutes, and you're done. You can serve with an orange marmalade sauce. Another quick and easy idea is cocktail meatballs. I've made those a bunch of different ways. I know if you search www.foodnetwork.com there's a recipe of Emeril's which I've tried before and they were delicious. I didn't save it though, so I don't remember it, but you could find it easy enough and give those a try too!

Bread bowl dips. Snag a round of sourdough and a baguette from the store, whip up a dip, cut the top of the round off, cube up the baguette, fill the bowl and arrange on a platter. Always a hit.
