TARRAGON VINEGARETTE

5fluoz / 150ml extra virgin olive oil
zest of 1/2 orange, thinly sliced with all the white pith removed
2 sprigs thyme
pinch of dried fennel seeds
2 sprigs fresh basil
1 shallot, peeled and sliced
11/2 cloves of garlic, sliced
1/2 tsp white peppercorns. crushed

"The easiest and tastiest fish marinade ever! Best on halibut, mahi mahi, or orange roughy."
INGREDIENTS
1/3 cup soy sauce
1/3 cup vegetable oil
1/3 cup bourbon whiskey
4 (4 ounce) fillets halibut
DIRECTIONS
In a shallow dish, mix the soy sauce, vegetable oil, and bourbon whiskey. Place the halibut fillets in the dish, and marinate 30 minutes in the refrigerator.
Preheat the grill for high heat.
Lightly oil the grill grate. Place halibut on the grill, and discard marinade. Cook 5 minutes on each side, until easily flaked with a fork.

Lemon Marinade

1/4 cup lemon juice
2 teaspoons grated lemon zest lemon zest
1/2 cup olive oil
1 clove garlic, minced
2 tablespoons shallots, or green onions finely chopped
1 1/2 teaspoons tarragon
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
lemon pepper marinade, Optional
lemon pepper, Optional

Whisk together ingredients.

Personnaly I don't use marinade much. I like to crust & saute my fish. You can use potato crusting, honey-almond or a rub, perhaps cajun.

Chop up lots of garlic and mix in a small bowl with oyster sauce. Leave it standing for a few hours, then stir when about to apply:

Clean the fish out, but leave the skin on.

Cut vertical slits in the skin and rub salt and lime in these cuts. Roast or bbq the fish slowly, while sprinkling with the garlic-oyster sauce.

in the philippines, we love to use rufina brand patis (aka fish stock) or maggi seasoning. but if that's not available, a simple mixture of soy sauce, crushed garlic, salt and pepper will do. and if you're not digging the too salty taste, a dash of brown sugar can neutralize the taste.

Simple marinade, great with fried/steam rice and chinese vegetables, healthy and yummy.

Rub a little tumeric (half tsp) on fish, a dash of salt and fry.
