Many patients are unaware they have been infected and the virus can remain dormant for months or years.
The man will need to be re-tested later. He may hopefully turn out to be one of the few lucky ones!

Actually, catching HIV can be quite difficult given the fact that the virus itself is very fragile outside a suitable host cell. Becoming dry kills it. Soap kills it. Many other commonly used hygiene products kill it.
Remotely, there is the possibility that the man has the genetic immunity acquired by many eastern Europeans secondary to the medieval bubonic plague epidemic.

many poss scenarios...she just picked it up someplace else, he has natural resistance, she has low viral load, they always used condoms, on and on
