Thanks for the tips everyone. I think I am well on my way to getting more vegetables in my diet.

Ynot me 2, you answered with "look at a vegetable then eat it instead of looking at it and shoving it up your bum"

Why would you say something so mean? I am here to learn about the vegetarian diet. That was not right what you said to me. I think you owe me an apology.

Go to Sainsbury's. Stop off at the veg. section. Stock up. Get out while you are winning. You are winding up the unfortunate vegans and vegetarians something fierce but I gotta hand it to you. You're winning by a mile

I make a gorgeous Sheperds pie with loads of veg -

Fry onions, add mince and fry, make a gravy add to the cooked mince, then add peas chopped tomatoes & peppers (i use 1 red & 1 Yellow) Meanwhile boil a pot of potatoes, carrots, parsnip & Sweet potato. Put the meat in an oven proof dish mash all the boiled veg put on top of the meat cook until the top is crispy and if you're not counting the calories add some grated cheese 5 minutes before your ready to take the dish out of the oven.

Make your own pizza - either make some dough or buy a ready base, put tomato puree on the base spreading it all round, then add as much veg as you like, peppers, mushrooms, sweetcorn,, tomatoes, peas, mange tout, onions, courgette sugar snap peas, steamed broccoli florets etc etc. Top with cheese and put in the oven.

Vegetable quiche - I cheat and buy a pre made pastry case, put it on a baking tray, steam some broccoli put in the pastry case when ready, fry some onions put them in pastry case when ready, add some pepper and grated carrot to the pastry case. Mix 3 eggs and 150ml of milk, season with salt and pepper, pour into the pastry case, bake in oven for 15 minutes ' 200'c then turn down the heat to 180'c for a further 20 minutes.

I could go on and on there are so many tasty recipes to be made with vegetables, maybe invest in a good vegetable cookery book, you could pick uo acheap one on Amazon.

You did not say if you are just vegetarian since there are strict vegeterains who dont take anything to do with animal/bird protein like milk and eggs. Vegetable which are natural are very nutritious to your meals when fresh for viitamins and rouphage supply into your body. This helps one in digestion system flow without any problem. Your meals to make it balanced, use cerials like beans peas Njahi, cowpeas groundnuts etc for protein supply. For carbohydrates use maize, cassava, wheat products. This will help sumplement you meals to give you a complete diet. Healthywise you will be done plus taking alot of water and fruits.

All vegetables are good for you and the best way to get a balanced variety is to buy different colours ... each coloured vegetable has different properties that are good for you so try different ones. Make sure you always have at least 5 servings of fresh fruit and/or vegetables each day and eat plenty of leafy greens and salads.

Add them to everything you eat/cook!
Add brocoli and carrots to soup
Eat a salad everyday (just throw veggies you like with lettuce, dress with olive oil, balsamic vinegar and a little diced garlic)
STIRFRY! Best way to include veggies! Stirfry whatever veg you like, then top with ready made curry sauce, peanut sauce, teriyaki sauce, black bean, spaghetti sauce, then serve with whole wheat pasta or brown rice! That's enough variety for a whole week!

P.S. two cups of tea does not count as a serving of fruit or veggies.
Fruits and veggies have nutrients and fiber that are important to the diet. While tea may have some nutrients it does not have fiber. It is good for you, but don't use it instead of healthy and yummy fruits and vegetables.

Hi...
It is already a great step that you want to change your diet in order to eat more vegetables...
During winter time, you can make different types of soup (vegetable, tomato, carrots, pumpkin, onion, peas....)
Make some desert with fruit (a good option is to put some pear or apple, with water and Cinnamon in the microwave for about 1 min)
Add fruit to main dishes (apple, pineapple, raisin, lime, passion fruit)
If you go to a restaurant, try to choose a dish with fruit or vegetables (rocket, spinach, carrot, pineapple....)
Change soda drinks for juice

Roast some sliced Tomatoes, Courgettes, Onions, Peppers, Aubergine in a little olive oil for about 30 mins. Lovely with most main meals or stuffed into a pitta bread (my fave) - keeps well in the fridge and tastes even better after a day or so. I also pop in a few garlic cloves with mine.

How about making some vegetable tempura? yummy with a sweet chilli dip

Soups, salads...

Make a vegetable stock by boiling a variety of vegtables like, celery, carrots, onion, tomato, garlic, potato's, etc... After straining out the bulk. Refrigerate the stock and use it to cook with... Gravy and sauces of all kinds. A thickning for cassaroles.
Use a can of broth instead of a can of water when making store bought soup...

It's a great way to get vegtables into children that won't eat them if they see them...

You can use vegtables such as carrots and squash in deserts. ie; carrot cake and zucini bread...

There've been some great tips on here already - hopefully you'll find some that suit your lifestyle.

Just remember to eat a wide variety of veg - different textures, different colours & different tastes.

Buy some good recipe books as well - try Rose Elliott. She's down to earth and has some great tasty, nutrious, easy to make ideas.

This is what we do.
We look at interesting veg. in supermarkets and on market stalls and then we try them. My hubby liked the look of a butternut squash!! It is great tasting and versatile. I bought a celeriac a couple of years ago because I was intrigued by it. It is delicious and can be used to replace potatoes in a lot of dishes. Aduki beans are great fun too!!!
Maybe make a rule to have one veggie meal a day and see how you go with that!

How about making veg soup - dice and boil up lots of different vegs with a dash of olive oil and some tomoate puree (if you wna it red). It is lovely especially on a cold winter day. Or drink substitutes like V8 or even make your own veg shake in a liquidizer.
