in my opinion, the best knives out there are made by wusthof. i have their Grand Prix II set and i LOVE them. they are well-balanced, have good handles and are razor-sharp.
yes, they were fairly expensive, but i think they are well worth it.

German knives - Henkles or Wusthof are the best of the best! Expect to spend at least $500- $800 USD on a set of 5 knives or so.
8" chef
8" serrated knife for bread
8" Carving knife
4" pearing
6" utility
A good knife set is EXPENSIVE but worth the investment because you will have them for life!

For general purpose, Henkle or Trident sets will do nicely. A Set should consist of a 14" slicer, 8" or 10" chef knife, a boning knife and a paring knife plus the steel. It will set you back about US$250.
For other specialty knife, look for the Japanese producers.

In my life of sales I have seen and demonstrated alot of nice sets. Recently Jason Roberts came out with a set for around $300 they are the best deal for the price. Includes
Chef’s Knife – 9-inch blade
Santoku – 7-inch blade, hollow ground edge (grantons)
Slicer – 8-inch blade
Petty Knife – 5-inch blade
Paring Knife – 4-inch blade
Storage Tray

Check out Emirills collection , In fact check out food net work. I now use several different Chef Knives, Farber Ware collection Cutlery sets are so confusing sometimes it's so many . I love Rogers , thats my choice.

Buy a German or Japanese set, and make sure it's high carbon stainless steel. Also make sure the set has the implement to set the edge of the knives.

I got some pampered chef knives as a gift and like them. They come with a holder that has a sharpener built in.
