If you boil soy beans until soft, and then break them up with a blender or whatever, you basically get soy milk; if you strain the lumps out and 'curdle' this liquid by adding sea salt (or magnesium chloride), and press the 'curds' together, you get tofu. How hard you press them together defines what kind of tofu you get.
It's a fun thing to do, but it takes several gallons to make one little block of tofu. You should do it though, at least once!

"Nigari" is just sea-salt, you can get a bag at any 'oriental' grocery store, or in a pinch you can use Kosher salt, just use a little less.

Soy bean curd! There are many different kinds of tofu; flavored; hard medium and silky soft to name but a few; furthermore there are many flavored tofus available in the market. Soybeans are blended with water, the bean fibers are strained out and this soymilk is curdled (in the same way cheese is curdled) and pressed into blocks.
