One form of a tamale is a meat or veggie wrapped in a corn meal dough, then wrapped in a dried corn husk. there are multiple variations.

In San Felipe, Mexico, I had crab, corn
and cilantro tamale - yum it was soooo good!

There are super-good Oaxacan tamales that you can buy in Austin, TX on Saturday mornings at the farmer's market at 4th and Guadalupe. (9 a.m. - 1 p.m.) They are wrapped in a banana leaf instead of a cornhusk. You can choose any of 3 fillings: chicken with red mole (my favorite), pork with spicy green tomatillo sauce (also very good) or black bean. They're $3 apiece but they're less if you buy them by the dozen (They make very good take-to-work meals because they are a tidy little foil-wrapped package and you just take off the foil and heat them in the microwave). You can also buy them every day at Oaxacan Tamaleo up on Anderson Lane.

On a trip to Tijana, I had one made with goat, and in Acapulco there was one made with tuna and mole sauce.
