This is very Texan/Southwestern. It's a nostalgic favorite that some of your guests might recognize. We have a place here in NY called "Cowgirl Cafe" and they serve the Frito pie the "authentic" way. Which is to open the bag flat and put the toppings on the Fritos and serve it bag and all on a plate!
Anyway, with the Frito-Lay Company being based in Dallas, this dish is about as Texan/Southwestern as you can get.
Frito Pie
3 cups Fritos corn chips
3/4 cup chopped onion or scallions
1 cup grated cheddar cheese
2-1/2 cups chili (your favorite -- homemade, canned, whatever)
Preheat oven to 350°F.
Spread 2 cups of Fritos in a baking dish. Sprinkle half the onion and half the cheese over the Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili.
Bake for 15 or 20 minutes and cheese is bubbly. Serve hot.
You can, of course, put out salsa, sour cream, etc. as toppings.

Being it's a Senior Center, I'd beware of hard or crunchy items they may not be able to chew w/o teeth or even w/ ill-fitting dentures.
Pulled Pork BBQ in little Pastry Cups
Ranch Beans
Cornbread Sticks or Muffins
Potato Salad (potatoes & eggs, w/o celery)
Apple Cobbler made in a cast-iron skillet
Maybe peach cobbler, too.

This is a must...a 5 star recipe from allrecipes.com...I make it ALL the time...it is perfect...goes with almost any menu.(especially country western) ..very east to make..delicious..and soft for them to eat easily....
Corn Bread Casserole
INGREDIENTS
1/4 pound butter, melted
1 (15 ounce) can whole kernel corn
1 (15 ounce) can creamed corn
1 (8.5 ounce) package corn bread mix
1/2 C. sour cream
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, combine butter, whole corn, cream corn, corn muffin mix and sour cream. Fold all ingredients together, pour into 2 quart casserole dish. Bake for 1 hour.
you will need to make a few of these...easily doubled..
**as far as other menu item..I suggest..soft..not too spicy foods...mashed potatoes, mild chili, or baked chicken...etc.

Black-eyed pea salad---3 cans black eye peas(washed)--2 cans sweet corn(washed)--celery--purple onions--italian dressing to coat.(some put a amall amount of tomatoes in also)If you are taking it to senior center cut you veggies very small.....

i would think BBQ anything would be a hit, chicken, steak, beef, hot dogs, hamburgers and make sure you smother everything in a rich tasty BBQ sauce, Also chilis ,stews, baked beans, Chips and different varieties of salsas
