I'd recommend any book by Rose Elliot - she's a very creative cook and has some wonderful recipe ideas. Happy cooking!

World Vegetarian by Madhur Jaffrey is a cookbook I use several time a week. As the title states, there are veg recipes from all parts of the globe.
Other favorites are Claire's Italian Feast by Claire Criscuolo and From the Earth by Eileen Yin-Fei Lo (Chinese).

Not sure where in the world you are, but a friend of mine bought me the Barnes & Noble vegetarian cookbook - it has lots of great, simple recipes and also a really good section on the properties and nutritional content of fruits, veggies, grains, dairy, herbs, spices etc.
I'm also quite fond of Delia Smith's Vegetarian collection - it's absolutely *great* if you like food porn (the photography is absolutely lush), and Delia being Delia, the recipes are clear and simple to follow.

"The new Farm Vegetarian Cookbook" is top notch. Starts out with the basics and works it's way up. Everything from making your own soyfoods and gets into neato desserts that even non-vegetarians think aren't veggie! The same people that publish it have dozens of other great veggie cookbooks and I've bought (and like and use) them all. Link provided below

If you live in the U.K. go to your nearest Sainsbury's and get the Sainsbury's Basics Vegetable Lasagne. It takes like 3 minutes to cook in the microwave and it's soo nice! Or you could have a jacket potato with cheese, butter and baked beans! The baked beans contain loads of protein which is good for a vegetarian diet. Well that meal is my favourite veggie meal. :)

check out the site www.3abn.org and click on the recipe section or the book section to find both recipes and books that will be really good and give you lots of good recipes. They have some sisters as well as some others that do programs on that channel that are really great and easy to do. Bon appetit.

I second, or is it third, anything by Rose Elliot. Tasty, down to earth, nutritious and easy to follow recipes. Her latest book is called Veggie Chic and looks truly scrumptious!
