Over the years I've made many things from soy. Smoothsoullady gave a decent answer but after reflection on the question I decided to give a little more detail. For the meat analogs you use either ground cooked soybeans or soy flour and mix with gluten and (typically) mushroom based flavors to get the right taste and texture. For ice cream, cookies and other desserts you start with soymilk (or soymilk that's been 'tofued') and proceed like you were using dairy. If you need more details just ask!

I think commercially they are probably soaked, cooked, then ground into soy powder.

Once they are turned into a powder, sort of like flour, they can be mixed with anything and the texture will be quite nice.
