Swedish meatballs, the way they're made in the US (like the recipe example given above), actually bear no resemblance whatsoever to genuine Swedish meatballs. The genuine ones are made with just ground beef, some bread crumbs, a bit of milk, an egg, some butter, salt and pepper and a tiny pinch of regular sugar. This is rolled into small (like ½ an inch across) balls which are then fried in butter or oil in a frying pan, never cooked in gravy. Often served with mashed potatoes, a brown sauce on the side and lingonberries.

Examples of other typically Swedish dishes are falukorv (a type of sausage), different kinds of pickled herring, kåldolmar (ground beef and onion rolled in cabbage leaves), blood pudding with lingonberries, salmon, a lot of different fish dishes, crayfish, moose steak, reindeer steak, beef steak with fried onions, pitepalt (boiled potato balls filled with ground beef), surströmming (fermented fish - don't try it!!!), to mention just a few.

Those little Swedish pancakes, stacked to towering heights! I have seen pictures and they are really neat. One woman of Swedish ancestry had her wedding cake made of a giant stack of Swedish pancakes.

Check out allrecipes.com and do a search for "swedish", you'll probably get a variety of recs to choose from. I am including the link. You should bookmark it if you cook a lot--if I can't find a recipe on allrecipies.com I almost give up!

Real swedish meatballs or as they like to call them Kottbullar 500 g (18 oz) ground (minced) beef/pork mixture 250 ml (1¼ cup) milk 75 g (¾ cup) white breadcrumbs 1 egg 1 onion salt, white pepper ground allspice Preparation Finely dice the onion and sauté gently in a little butter without browning. Soak the breadcrumbs in milk. Blend the ground meat, preferably in a food processor, with the onion, egg, milk/breadcrumb mixture and the spices to the proper consistency and taste. Add a little water if the mixture feels too firm. Check the taste by test-frying one meatball. Then shape small meatballs with the aid of two spoons and place on water-rinsed plates. Brown a generous pat of butter in a frying pan, and when it “goes quiet” place the meatballs in the pan and let them brown on all sides. Shake the frying pan often. Serve with potato purée or boiled potatoes and raw stirred lingonberries.

Swedish Meatballs are yummy over egg noodles. Also, ligonberry "sauce" kinda like cranberry sauce
