Cochinita Pibil
2 pounds thinly sliced leg of pork, marinated overnight in a sauce of: 1/2 package of Mexican Achiote paste, 6-10 garlic cloves, 1 tblsn freshly ground black pepper, 2 1/2 cups freshly squeezed Yucatan sour oranges (probably ONLY avaliable in Mexico) OR 2 cups freshly squeezed regular orange juice mixed with the juice of 5 limes or lemons. (some recipes will say that you can use vinegar instead, please DON'T, the limes or lemons work MUCH better.....) - you blend this all together in the blender and then add it to the sliced pork and place in the fridge overnight.
Next day, when ready to cook: mix in 1 tblsn of MEXICAN Oregano, 1 tblsn cumin seeds, place the mixture in a pressure cooker, add water (if necessary) to just cover, then add on top 4-5 small Bay leaves or 3 large ones, 2-3 strips of fatty bacon, cover and pressure cook for 45 minutes. (You should check for tenderness, as not all pressure cookers are the same...)
Remove bacon and Bay leaves and serve the Cochinita Pibil with a Mexican white rice, a red onion and Habanero chili mix and lots of your favorite tortillas, (corn, flour or whole wheat). Along with some real Yucatan dark "Leon" beer! (if you can find it....)
(to die for.........)
NOTE: If you use a "fatty" cut of pork for your meat, you can leave out the bacon.......

I love taco shop food, like carne asada anything or breakfast burritos (carne asada fries are a specialty here in San Diego), tortilla soup with avocados, huevos rancheros, carnitas tacos

i learned how to make enchiladas you boil chicken breast with just salt that cut it into pieces but it aside for now than to make salsa for the enchiladas boil green or red tomatoes with jalapenos peppers once that's boiled put it into the blender and put the tomato and jepeno a onion and garlic. buy corn tortillas and heat them put chicken on the tortilla put lettece sour cream parmesan cheese and a piece of guacvo

That's such a hard decision, but my top 5 are chili rellenos, chicken enchiladas, tamales (red chili/pork, green chili/chicken, and cheese/jalapeno), pozole, and menudo.
