Green Chicken Enchiladas

Bonless skinless chicken - either white or dark whichever you prefer
1 jar Heinz Chicken Gravy
1 can Green Enchilada Sauce
8oz Sour Cream
Corn Tortillas

Boil chicken until done using whatever you want to season (I use chopped onion, fresh
jalapeno, garlic, salt and pepper)

While that is cooking mix together your gravy, sauce and sour cream.

When chicken is done, let cool a little and put in a chopper to chop it up.

You need to soften the tortillas in hot oil. Do not let them get hard. You are just putting
them in there long enough to make them bubble.

Spread some of sauce on tortillas - not too much - then add chicken.
Roll them and place them in a baking dish with seam side down.

After your pan is full, spoon some of remaining sauce mixture on top of each enchilada -
but don't make them soggy.
Sprinkle with cheese and bake at 350 for about 35 minutes.

Carne Guisada is a wonderful dish for this time of year. It is a delicious savory Mexican meat dish. Check the web for recipes that take less time...there are many, but this is a good one. You might want to use your slow cooker for this one. Great with rice and salad.


INGREDIENTS
2 tablespoons cooking oil
1 pound beef stew meat
1/2 (6 ounce) can tomato paste
1 (10.5 ounce) can beef broth
1/2 cup water
2 cloves garlic, crushed
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
salt to taste
2 serrano chile peppers, seeded and chopped
2 teaspoons cornstarch
DIRECTIONS
Heat oil in a large saucepan over medium high heat. Cook beef until evenly brown. Pour off excess fat. Stir in tomato paste, beef broth and water. Season with garlic, chili powder, cumin, black pepper, salt and serrano peppers. Reduce heat, and simmer for 8 to 12 hours.
Dissolve cornstarch in a small amount of water, and stir into simmering stew until thickened, about 5 minutes.

Chicken Enchiladas!

Boil chicken breasts until almost cooked, let cool a bit then shred

Fill flour tortillas with shredded chicken, cheddar cheese, sliced can green chiles, roll up and place in baking dish

Cover with green chile sauce (you can use red as well) and bake in the oven for 20 min, remove from oven and sprinkle cheese on top, put bake in oven and bake until cheese has melted.

Serve with refried beans, or black beans, or pinto beans and mexican rice.

Always a crowd pleaser. Enjoy!

Black Bean Taco Salad!!!

2 (15 ounce) cans black beans -- rinsed and drained
1 (2 1/4 ounce) can sliced ripe olives -- drained
1 1/2 cups chopped seeded tomatoes (about 2 medium)
1/3 cup shredded Cheddar cheese
1/4 cup chopped green onions (2 to 3 medium)
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon ground cumin
1/4 teaspoon pepper
4 cups chopped spinach (about 6 ounces)

Mix beans, olives, tomatoes, cheese, green onions and cilantro.
Mix lime juice, cumin and pepper; toss with bean mixture. Serve on spinach.

What about an easy three course meal...

Soup:
Sopa de pasta
In 2 tbs oil fry one pkg any small shaped pasta (alphabet, wagon wheel) until light brown, add pureed tomato paste with a small piece of onion and a small garlic and let it fry on low heat for about 3 minutes, add salt, pepper and 1/4 tsp cummin. Add 4 cups chicken broth or water and let it boil on low heat until fully cooked (about 10 min).

Main course:
Tinga de pollo
Fry 1 onion thinly sliced, add tomato paste, salt and pepper, if you like it hot add 1 chipotle, let it all fry for about 5 minutes, add 1 shredded chicken breast and let it boil to mix flavors, add some water or chicken broth if necessary. Serve with black beans and/or rice, or make tacos with it.

Dessert:
Plátanos con crema
Mix 1 cup heavy cream with 1/4 cup sugar, add some cinnamon, dash of nutmeg and a dash of clove, mix with spoon until sugar is quite dissolved (if too thick, add little milk) Peel and slice 3 bananas and add them to the cream mixture. Decorate with some more cinnamon.

Fajitas are one of my faves. And my kids - they're so fussy.

I had real chicken fajitas at an outdoor restaurant in Mexico. Very nice:

Chicken Fajitas
(serves 4, unless you are really hungry!)

Ingredients
4 boneless chicken breasts, sliced in thin strips
1/2 cup fresh lemon juice
4 tablespoons salad oil,
plus 2 tablespoons of oil for cooking
1 tablespoon wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 green pepper, sliced in thin strips
1 onion, sliced in thin strips

Directions
In a bowl add lemon juice, oil, vinegar, salt, pepper, garlic powder, chili powder, and cayenne pepper and stir until combined. Add chicken strips, green peppers and onion and coat evenly with marinade. Marinate for 1 hour.

In a hot large skillet or cast iron fajita pan, add 2 tablespoons of oil and add chicken, peppers and onions. Cook until the juices of the chicken run clear, about 15 minutes. Stir the fajitas often so that they do not stick to the pan and burn.

Serve with warm flour tortillas and your favorite accompaniments. I suggest sour cream, guacamole, shredded cheese, and Pico de Gallo (salsa).

* If you would prefer to grill the chicken, do not cut it into strips. Grill for 15 minutes or until juices run clear.

Yes, my chicken taquito casserole. It is easy and delicious!

Buy some frozen taquito's, and some shredded mexi-blend cheese. I make a vegetarian chili (since the taquito's have meat in them) with black beans, kidney beans, pinto beans and redbeans. I use one can of diced tomatoes and one can of tomatoes with Chile's if you like some heat in your chili. Saute' an onion with some garlic and add to your chili mix. Add as much chili powder to taste along with s&p. If you'd like buy a pkg. of chili seasoning.

In your baking pan, put a layer of chili in the bottom. Next a layer of taquito's. Top this off with a layer of chili and cheese. Repeat layers if your like or use just one. It is good either way. I usually buy the large box of taquito's and make a double layer.

Bake covered with foil at 375 for about 40 minutes, till hot and bubbly. Uncover to brown the cheese for about 8 - 10 minutes. Watch to make sure your cheese is not overdone. I like my cheese very toasted. YUM!

There is a really excellent recipe for mole sauce on epicurious.com. I use it every time I make enchiladas. Search on epicurious for "enchilada" and look for one that's titled something like chicken enchilada with green olives. Skip that part, and read the mole sauce. And don't leave out the chocolate. Even my husband loves this sauce. Make any enchilada you want, but use this sauce! :)
