You can use pork or chicken, add 1 cup of chicken broth, 1 tsp cumin & chili powder, 1/2 tsp black pepper & salt and cook over medium for 6 hours.

Remove the pork or chicken, add 1 cup of instant rice to liquid and cook for 5 minutes to absorb. Add pork or chicken back, mix well and add a can of drained beans.

If you like the flavor of cilantro, add some minced before serving.

as far as MEXICAN -there are no dishes in this combo-unless you got three pots going together ! THE ITEMS COMPLIMENT THE NEXT,SO,this would not work or taste very good if combined with each other because of the balance in the dishes !
very open for error ! and a big waste !
try a good pork and chili (red,or green ) stew ! mexican rice (called spanish ) and the beans can be precooked and stored then reheated .
not to bore but -mom and grandma used to begin cooking at 4-am making fresh tortillas (wheat and flour ) for the day after that came breakfast (usually the leftover beans were reheated and some chorizo added ) eggs were made along with bacon or sausages. then more beans and rice were prepared for the next two meals , lunch was lite maybe enchiladas or some tacos -then the main meal was started carne asada sauces ,chili con carne,so-on-etc. they ewnt to bed around 8-pm after they got all ready for the next day !

Put all above, not to much rice, not too much beans, more water, do not forget a small onion, no salt.
