it you cook it plain it will be dry. i wrap in it foil loosely and add ...........
1/2 cup orange juice
1 cup crushed walnuts
1 cup dried mixed berries (trader joes makes a great mixed berries bag)
1/2 cup apricot preseres
2 table spoons of soy sauce
1 apple cut in thin thin slices .
i wrap all this stuff in the tin foil and bake it in a bread pan for 3 or 4 hours at the recommended baking time. after 2 hours i will flip the tofurkey and cut thin think slices to let the marinade juices seep in the middle a bit more.

Squash and Tofurky
1 acorn squash, cut into big bite sized chunks
1/2 cup chopped green onion
2 to 3 slices of smoked tofurky, diced
1 sprinkle of garlic powder
1 pinch of nutmeg
a little vegan margarine
some extra virgin olive oil
fresh cracked pepper and salt to taste
Heat margarine and olive oil in a pan. When the margarine is melted throw in the squash and onions. Sprinkle in the garlic and nutmeg. Season with salt and pepper.
When the squash is almost tender throw in the diced tofurky.
Cook until the squash is fork tender and slightly brown. Reseason with salt and pepper.
Serves 1.
GLAZED TOFURKY
(Serves 4)
1 pound Tofurky, chopped into bite-size chunks
10.5-ounce can mandarin oranges, drained
10-ounce jar apricot jam
1/4 cup molasses
2 Tablespoons orange juice
1/4 teaspoon cayenne pepper
Preheat oven to 400 degrees. Meanwhile, spread out chopped Tofurky in a 9"x9"x2" square pan. Spread oranges on top. Next, mix remaining ingredients together and pour mixture over the Tofurky and oranges.
Bake Tofurky in an oven at 400 degrees for 20 minutes. Serve warm over a bed of rice.

Tofurky is pretty good. There are a few brands out there to try. Some come with dressing already stuffed in it. (Safe!)
I agree with the above answers - it will dry out if you don't wrap it and baste it - but that's true of all turkeys.
I like something with brown sugar and oj.
Don't forget the cranberry sauce!

Had Tofurky and it was a little dry. Make sure you have foil wrapped around it or put it in a casarole dish with a lid on it while it cooks. If you want it crusty on the outside then broil it a little before serving it.
